I'm not certain how many books you will find with beautiful illustrations, but you may want to check out some of the Charlotte Mason (CM) websites (like Ambleside and Simply Charlotte Mason) for wonderful, classical titles. Their homeschooling support boards often have threads about books that will keep boys interest.

These days, I won't buy picture books unless the illustrations are fabulous.
Which is why I got into my line of work. It's all at my fingertips.

We have one I think it is called "good dog Carl." Although I am never quite certain WHY a mother would leave her child to be babysat by a dog (and it has really bothered me before), my kids LOVE the book.. the baby gets out and about and the dog faithfully follows, keeping him from harm's way the whole time.. We also have one based off the tv series "Bear and the Big Blue House"? Is that right? Anyway, it is a walkthrough of his house and kids point out all the items, tub, couch, etc. My delayed talker loved this book, because he could recognize and name so many things.

Two that come immediately to mind as perennial favorites in my home that you might not know:

A Chair for my Mother by Vera B. Williams

The Three Little Wolves and the Big Bad Pig by Eugene Trivizas

My "can't make it through without crying" book is I Promise I'll Find You by Heather Patricia Ward. The theme is missing children and how if the child were ever lost, the mother would never stop searching until she found the child. Although the subject is very serious, it is actually kind of fun for kids because the little child with the red shirt is "hidden" on every page and you have to hunt for that kid along with the mother.

No, No Titus by Claire Masurel, illustrated by Shari Halpern; and

Who Was Born This Special Day? by Eve Bunting, illustrated by Leonid Gore. It's a Christmas book, so it wouldn't might not work for your family, but the illustrations are breathtaking.

A Good Place To Hide by Louis Slobodkin. I'm not sure if it's in print, I found my copy used. It's so simple and satisfying and just good in every way.

Gordimer Byrd by Robert Weinstock. You've got to read this one, really interesting and fun, on a topic not usually written about in children's books - the impulse to make art

I love the artwork in Cendrillion and Smokey Mountain Rose. Both are versions of Cinderella. Both written in dialect. Cendrillion is Caribbean and Smokey Mountain Rose is Appalachian. They're really fun to read aloud because of the dialects.

They were both really popular with the 4th graders in my classes.
