On another thread someone recommended keeping vanilla extract around for that purpose. Adding a bit to reconstituted dry milk makes it much more palatable.

Exactly! Not just stockpiling food, but thinking about incorporating stockpilable and in-season/local/garden/home-preservable foods into your usual eating.

Click on one of the Related Topics (ie. grains, vegetables, fruits, milk, etc.), then on How Much is Needed on the right side. You'll then finally get to the section where you see Click Here to See the Chart.

I have a lot of stuff in the freezer, but in an emergency, i would probably try to trade some of the meat, etc in there as it wouldn't last too long (like in an earthquake for example- power outage).. so my "stockpile" is more beans, pasta, flour, sugar, SOME canned veggies, canned sauces, canned pineapple (fresh is REALLY expensive here, so I usually use the tidbits in curry, pizza, or salads), coffee and splenda for dp who has diet restrictions..
