How important is the sound table? How often should children be using it (every day, weekly, when they feel like it)? Is it a "cornerstone" of the Montessori method? Should I be worried that no parents sign up to do sound table at DS's school, and that it seems to be a low priority to the lead teacher?

I thought I'd missed something big.
My DD is in her second year and we've never heard of a sound table. There are sound sensorial materials and some classrooms have very nice Montessori bells (neither of my DD's have, though). There are tons of ways to bring music into the classroom. But I've no experience with a sound table.
I hope that eases some of your concerns.
