Fried bread recipe

I want to make a fried bread recipe which is GF and TF (soaked). I am thinking kind of like a pancake but for eating with meat or something which I fry in coconut oil. I would like to make it with rice flour and freeze it to have on hand.

I don't have any good rice pancake recipes, or I would just use that.

Any recipes???? Thanks!

Not sure if this would be any good as it has potatoes in it but I made these this morning with leftover mash from last night and we ate them with bacon and eggs...yum!

200g potato mashed with butter
50g gluten & wheat free flour (mine was a mix but sure just rice would be fine)
1/4 tsp baking powder (could probably leave out)
1/2 tsp salt

Sift flour, baking powder and salt together, add mash and mix well to form a dough. Divide into to balls and roll each one out to desired thickness (mine was probably half a centimetre) then cut into quarters. Use spatula to lift into hot pan and cook for 3/4 mins each side.
