Looking for an awesome dairy,corn, and egg free dinner dish!

I'm throwing an impromptu dinner tomorrow night for 5 adults and 1 bottomless pit child (mine lol). It's informal (inlaws and such) and it will be after they've all been helping my SIL move all day long.

I was thinking perhaps some sort of roast. I'm just totally out of ideas these days and sick of the same stuff over and over again. I can make just about anything corn free these days no matter the recipe so if you've got some great dairy and corn free ideas I'm all ears to those too! Thanks

can you do fish?
I posted on the chat thread what I do with salmon
make up a 'marinade' of lemon juice, olive oil, parsley (optional), garlic, salt and pepper in the food processor or just mash up teh garlic by hand and mix them well

pour on the salmon and bake ( i never check the time, it's about 1/2 hour or so at 350 or 400..salmon cooks up fast)

I also make up roasted potatoes in the same marinade, as well as baba ghanouj (lebanese eggplant dip with sesame seed paste)

then a big green leafy salad with olive oil/lemon juice/garlic/salt dressing

OOoh, yeah fish sounds good. Plus it's light, that might be a good idea after everyone's had a long hard day and it may be kind of late when we eat. Do you make your own salad dressing? I admit that since going corn free I haven't had any salad dressing at all...not sure why I never tried making my own.

To be honest I don't make it in batches, I mash the garlic really well in the salad bowl or use a mortar/pestle, put in my greens/veggies, throw on lemon juice, olive oil and salt and mix.

And i just use canned baba ghanoush and add extra lemon/garlic/oil if I feel it needs it.
Do you sense a garlic/lemon/oil theme?

The salmon I did tonight (and every 4th day): spread olive oil over it, sea salt & pepper. Bake at 425F for 14-16 minutes.

Another good one is chicken mirabella, and can be done in the crockpot.

Kathy, why didn't I think to look through your website? :

I made your chicken and rice casserole the other day and it was delicious! I finely chopped up some kale I had and threw that into it as well figuring I could add some extra nutrition without messing with the taste and it was great (and I thought the green specks looked nice).

I'm def liking the idea of salmon. I have a coconut rice recipe that's pretty good. Maybe some salmon, coconut rice, and a salad? That'd be easy to make too. I have a dinner roll recipe, you think I should make those too just to help add to things?

Now for dessert... I wish peaches were in season, I've been craving peach pie.

Oh blah. Dh just pointed out that we had fish the last 2 times his parents were here. Which is funny since we only eat it maybe once a month usually. So now I'm not so sure about the fish...

I don't like to make anything too "meaty" though because MIL doesn't really like meat and always says she'd be a vegetarian if FIL would "let" her but he gets too worried about her not eating meat so she always tries to force some down.

what about a small roast chicken in the oven with roasted potatoes, carrots, celery, onions and then make gravy, some salad, a fluffy rice side dish and mashed potatoes using broth instead of milk/butter?

I decided to go greek! I forgot about my allergy cookbook (The Whole Foods Allergy Cookbook, it's a really great one) and I found Greek Style Chicken and a greek style salad & dressing. Plus I'm going to make some hummus and have some raw veggies and such for dipping and maybe some pita bread if I can find a recipe I can use.

Thanks for letting me bounce around ideas! My dh is no help whatsoever with this sort of thing.

King Arthur's pita recipe is really good. I used to make them all the time before we had to take gluten out as well. Easy too if I remember correctly. They were sooooo good hot out of the oven.

Sounds like a good plan!
