Chicken leftovers

We just roasted a whole chicken and ate much of the meat, but there are still a ton of little bits that I plan to pick off and use for tomorrow's meal. I was thinking of making some kind of pot pie with the bits and some veggies, but was wondering what else you might do with leftover chicken? Or if anyone has a chicken pot pie recipe? After we use the rest of the meat I was going to boil the bones for a soup. Thanks for your suggestions!

I like to make individual handheld pot pies, or empanadas...soemthing liek that. I don't like to make it in one big pie

Add to pasta or mac and cheese. Make a chicken salad.. my favorite is an apple and chicken with sweet curry.

chicken tacos!:

just lightly saute the chopped chicken bits with a little salsa verde or whatever type of taco seasoning you like
serve in warmed corn tortillas with your usual toppings
(we like guacamole, fresh tomato salsa, refried black beans heated with feta, sour cream or plain yogurt and shredded green cabbage)
This is, hands down, my kids favourite meal!

Oh wow robugmom, that sounds delicious... though we just had black bean burritos before the chicken so I'll probably wait on that one

Gardenmommy, what do you put in your chicken and rice recipe? It sounds nice and easy
I will probably be going with some kind of improvised pot pie after all, since I have time to do something semi-elaborate for once. We only have a normal-sized pie pan, but I'm thinking it'll probably be fine that way...
Getting a whole chicken instead of individual parts of a chicken has affected me way more than I thought it would. I was missing out on a whole sensual experience of preparing my own food that I never knew was so satisfying. Rubbing the whole raw chicken with salt and pepper and butter, savoring the different meat of the different parts, really made me realize how extravagant it is to be able to buy, for example, 4 chicken breasts at once, and eat only chicken breast at one meal. Definitely not something that would have been done 70 years ago. Whole grains are so much better than grains with parts removed, why not animals too? Anyway, interesting...

chicken tortilla soup :

There are a ton of recipes online, but you can pm me if you want a recipe I use. It' basically a tomato/chicken stock broth with onion/garlic/spices simmered with the leftover chicken bits. You crush tortilla chips in a bowl, add shredded cheese, then top with the soup. Add sour cream or guacamole, if you like. The broth softens the tortilla chips. It ends up tasting like an enchilada soup ~ yum!

chicken and cheese enchiladas. I LOVE the recipe from NT, though I sometimes vary what veggies I put in it, and i would make the sauce less spicy. also, I add cheese, since the recipe doesn't call for cheese. I also used less chicken and more veggies. I made 11 enchiladas with the meat from half a chicken instead of 18 from the meat from 2 chickens. (actually, I had been picking at the chicken leftovers for a couple days before that so it was less than half a chicken. Now, those 11 enchiladas fed 4 people dinner (with some beans), since they were small. It was a great use for thigh and leg meat too, which doesn't get eaten on roast night or as sandwiches around here.

-chicken and cheese sandwiches (I'm coming off a 10 year no-cheese kick, and am obsessed with cheese right now lol)
-chicken matzo ball soup
-rice "pilaf" with chicken (saute onions in the pan you cook rice in, add in the rice and some dried fruits, cook in the oil for a few minutes, then add chicken broth and cook. warm little pieces of chicken (I've never done this but I might try putting the chicken in the rice pot halfway through?), and toss rice, chicken and some nuts (pine nuts I love, toasted or not)
-sun dried tomato pasta with chicken (make your fave sun driend tomato pasta sauce and add chicken at the end. I do mine with evoo, and sun dried tomatos cooked while the pasta water is heating, then when the pasta goes in or a bit before it, add the chicken, frozen peas, and some more evoo to the pan. mix together. wonderful with angel hair)
-leftover chicken and drippings

that's how I'd eat it.

Chicken and rice:

Depending on how many people you are feeding, you can vary the amounts. I never use a recipe, per se, I just go by what looks right. With the rice, I usually make a big pot, and use whatever is leftover for this dish.

About 1-2 cups cooked rice
About 1 cup cooked broccoli (more or less, depending on your taste)
About 1-2 cups cooked chicken
1 can cream of mushroom soup (I always use amy's or another natural brand)
milk
salt and pepper, garlic powder, oregano, parsley, etc. (whatever you have is fine)
Shredded cheese (of whatever variety you have)

Pour everything into a bowl, except the milk. Mix it all together, using the milk to thin it to a spreadable consistency. Add whatever seasonings you have, and mix those in, too. Pour into 9 X 13 baking dish, bake at 350F until bubbly and cheese is melted.

I have left out the cheese, used water instead of milk, had lot of broccoli, not so much chicken, etc. It is very flexible, adapting to whatever you have and like. I use this dish as a super fast and easy last minute supper.

We roast 2 chickens at a time... one to eat that night and one to make something else with. Usually we make some type of chicken salad. We use a canola mayo from Whole Foods that's really yummy... variations are...

chicken
mayo
diced apples
raw chopped almonds
dill
pepper
----------------------------
chicken
mashed avocado
salsa
(this one is great on a bed of spinach greens)
----------------------------
chicken
mango chutney
curry powder
raisins
raw chopped cashews
maybe some mayo if it still seems too dry
-----------------------------------------

cook chicken, veggies, onions in a pot with a can of light-coconut milk, curry sauce/powder, a couple of tblsp of peanut butter, and sesame seeds. Yummy with curry and so simple!

Around her in Amish Country our pot pie is a soup
I would make broth with the chicken carcass and add celery, onions, and carrots
Add the shredded chicken to the completed broth and make pot pie noodles.

sorry about the measurements as you can see I cook by eye

a mound of flour (probably 1 1/2 to 2 C)
1-2 eggs
salt
Milk to make a dough
mix and roll into 1/4 inches thick
cut into small squares and drop into the boilling soup a few at a time.

Add salt, pepper and parsley to taste.
When the noodles rise to the top everything is done

You can omit the noodles and add corn to make chicken corn soup. Make sure to garnish with chopped hard boiled eggs!

I'm reviving this thread with a question.

When you make your own mini pot pies what do you make them in? I used glass custard cups today and my pot pies stuck to the inside.

I was thinking of using a muffin pan and freezing the whole pan with raw dough and once it's frozen popping the pies out into a ziplock for a fast dinner some other time.

Thoughts?

leftover chicken here gets put in
fried rice
risotto
a creamy sauce with pasta or baked potatoes
heated up in any leftover gravy and served with mashed potato
chicken and vegetable soup.
Occasionally I'll make a pie

In summer we tend to have it with salad or sandwiches

Personally I have never made mini pot pies but I think the muffin tin idea sounds very practical.
Did you butter the glass custard cups?

I didn't butter them because I figured there was enough of it in the crust. I will try the muffin tin and let you know how it goes.
