NT flourless cake questions...

My son's b-day party is next weekend. His best friend is gluten free. Timmy wants his best friend to be able to eat his cake. Has anyone made the chocolate almond flour free cake from NT with great success? I have enough crispy almonds to grind for the recipe.

What's the texture like?

There are some great recipes on the Tropical Traditions website for cakes that use coconut flour.

This isn't a cake recipe, but I use it to make shapes and decorate cake instead of wilton's or marzipan. I made my niece's first birthday cake out of it. You can make it as a treat or another time when your son's friend comes over:

1 stick of butter, softened
1 cup powdered milk
1 cup of powdered sugar
Mix by hand and roll into balls or make shapes. It should be about playdoh consistency.

I haven't made the recipe from NT, but I've made another fabulous flourless chocolate cake with ground almonds. It had a dense almost fudge like center and it's edges were crispy, almost like a meringue.

Also ChristieB had some wonderful suggestions right around the holidays for nut flour cakes, I can't find that post right now, but will look again in the morning...wait a minute, I believe that one of the sites she mentioned was this one: www.pecanbread.com

never made it - but do let us know how it turns out! we are GF too and I'm just getting into using almond flour/ground almonds...

I've made this cake twice now (we are gluten free since ds is celiac), and it's aphenomenal success. Dh says it's one of the best cakes I've ever made gluten free or not YOu don't need to add expresso to the frosting, just vanilla if you want.

I just made the Flourless Almond Cake from NT (on the facing page) last night. I used almonds that I'd strained from some homemade almond milk (from Whole Life Nutrition cookbook, soaked and not crispy), and I subbed 6 Tbsp honey for the rapadura, and I called mine Honey Almond Chiffon Cake. It was absolutely wonderful! I loved the texture - like a custardy cake, almost. I bet the chocolate recipe would be yummy, too. But, you may want to make a test one first to make sure it turns out the way you want.

I still have some left... Going to go eat it now, with some goat's milk ice cream

thanks for all of the advice, I'm going to try both recipes and I'll serve the one I think turned out the best
