random gluten questions...

our allergies are egg (IgE) dairy, soy, and gluten intolerance

the allergenfree cookbook I got uses vitamin C crystals--I bought some
are these safe?

I attempted GF pancakes and WOW gluten free cooking is HARD (without eggs especially) they were a disaster--I then realized WHY Iw as buying the $6 packages! --is this why most of you stick to just buckwheat pancakes?

is chili powder safe from gluten? I can't find an answer. the only other "single" spice I need to worry about is curry right?

I'm confused---all GF websites say MUSTARD is okay--but the organic kind I got (naturally preferred? from fred meyer) --says it's from ORGANIC GRAIN VINEGAR---is that okay?

also--I got a list of GF foods from western family- do I trust this?
I have a good spice blend from "blend it up" and their website says it's "generally considered gluten free" does that mean it really does have gluten?

we are thusfar corn okay---corn tortilla chips would be okay for occassional things right? we had taco salads last week with ground turkey, pinto beans lettuce and salsa---SOO good! (this ones ingredients are: ground corn, water, vegetable oil (cottonseed, corn oil) salt.

I think that's about it--we are doing great on our gluten free diet--though maybe we aren't getting enough fat--

we have green smoothies (with flax oil)for a meal--a huge salad (homeade dressings with olive oil) with nuts, beans, etc for another meal and then either meat and veggies, sweet potatoe fries and quinoa, or brown rice--things like that for another meal . I've also been making some "healthy treats" with coconut oil. ---
how can I look at our intake of nutrients? awhile back someone posted a link but I could NOT figure out how to make sure we are deficient is who knows what.

It depends what's in them. Mine are just full of corn.

I make millet pancakes and buckwheat waffles.

Curry is not a "single" spice. It is a spice blend and contains different things. As far as I know, there is no gluten in them, but you should call the company to make sure. I think it's McCormick that is generally considered safe. Someone else know?

Usually if it says it's gluten free mustard, it's corn vinegar. But most distilled vinegars, even if they're from wheat, are considered gluten free because of the distillation process

Just be careful on the oils. A lot of them have soybean oil in them.

You sound like you're doing great so far. It can seem overwhelming at first.

I have been avoiding anything w/ "salt" as an ingredient for fear that there is gluten in it (as opposed to sea salt). But then I was trying to find out if regular canned peas that have salt in them would be gluten free, and thought maybe they were, that maybe the big food manufacturers wouldn't be using iodized or processed salt that would have the anti-caking agents in it like table salt does so maybe don't contain gluten?

thanks for the responses--good to know..

without a corn allergy would vitamin c crystals be bad for us? meaning are vitamins grown on corn generally bad for us anyway? probably a stupid question---not that I want to narrow our foods any more right now either way-

If you're fine with corn, then it shouldn't be a problem.
