We had leftover Soup from SOup Night--Broccoli and Potato from Veganomicon ...yum I need quick and esy this week so will be looking for ideas.

Last night was Tofurkey beer sausage, roasted baby potatoes and sauteed kale.

Tonight is Cathe's tamale pie and roasted green beans.

Tomorrow night DH is in charge of dinner since I'm working out of town all day, so it will probably be pancakes and fruit.

tonight we are having tempeh hashbrown casserole with sauteed onions and melted cheddar cheez, sauteed swiss chard with toasted sesame oil, and melon slices.

I made the yummiest broken rice dish tonight. It's my new favorite rice I almost don't want any other kind now! My dear African friend gave me a 5 pound bag. I have a good exchange going here. She doesn't know a thing about baking at all, but she cooks the yummiest African food ever so we swap. I bake her goodies she gives me food . They are not vegan but dairy/egg allergic. The first time I made her boy chocolate cupcakes he ate them like I swear he was planning on never seeing food again!

Tonight is tofu salad sandwiches and fruit salad. I love my tofu salad, my husband will likely eat it as a big salad over lettuce but I bought pita bread so I can eat it as a sandwich. I have not been into lettuce much this pregnancy for some reason.

Tonight we had a most delicious yellow split pea dahl from Mollie Katzen's Still Life with Menu. We had it over brown rice. It was unbelievably delish and made the house smell so great. Next time I may cut back on the water some, it came out like soup and not a really thick soup. I also took asparagus tossed it with olive oil, and salt and pepper and broiled it...super YUM!

Tonight was chicken parmesan for my meat eaters,only the noodles and marinara for us veg heads I also made green beans with a lil crushed red pepper for some kick
Tomm will be tacos with black and/or refried beans, lettuce,tomato,onion,cilantro,cheese,fresh made guac,salsa.....

If I have time,I'll broil some tilapia to throw on my tacos with a mango salsa and warm corn tortillas

tonight we had agave baked lentils with onions and carrots, steamed broccoli with mustard-mayo sauce, and rice. a boring but easy meal. my toddler loved it.

My son took one bite of the Brazilian black bean soup last night and said "This is what I'm talking about! I love beans!"

Tonight I'm making 'meatball' subs with some cut up fruit and maybe some fries.

I got my bean cookbook from Rancho Gordo and whoever recommended that, thanks! Tomorrow night will be the Borlotti beans in tomato sauce over polenta. I need to go buy some fennel. I also ordered some beans that I could never find here.

Last night we made spinach and 'mozzarella' pizza, the crust was so delish! A tad too thick, next time I use less dough overall, but it was totally yummy!Tonight bean and rice and cheese buritos.
