tonight was "texas seitan sandwiches" which were basically open-faced sandwiches with grilled, thinly sliced seitan topped with baked beans (some with cheese, then broiled) on sourdough bread. soooooo good! i made the seitan and baked beans myself -- my first time trying this baked beans recipe and it was so yum. :

tonight was taco salad night. instead of fake meat we used pinto beans (we just seasoned the beans with taco seasoning). it was delicious!

nope the recipe we used was from ed&bv and it was just too bland/dry for me..

those sandwiches seem divine! ill have to make those sometime.

Vegan pizza night here: roasted broccoli and sun-dried tomatoes with a cheesy sauce spooned over it all. Oh and the garlic-miso mixture brushed on the crust. So yum!

I just had my teeth prepped for a crown to be added on Saturday. It hurts!! I am not supposed to eat anything cold, anything hot, or anything with hard bits :. Any suggestions for dinner ?

Ouch! Hope it goes well for you on Sat! I'd try some thick soups served warm...like potato leek or something like that.

Night before last I made a barley mushroom pilaf that turned out very well...first time I've cooked with barley. Last night we went to a banquet but luckily there were some vegan options. I'm not sure what I'm going to make tonight, but it needs to include lots of fresh basil.

our's was also that recipe, but i tinkered with it and it was so tasty!

Or some mung beans with a nice veg gravy? Or couscous with spinach, not too hot of course!

I am having serious issues finding good catering for a small family event in May. I don't WAAAAAANT to do all the cooking!!!
