MARCH Veg what's for dinner thread - Page 2

I always feel so out of place posting our meals here because they are so boring. Mainly I am here for inspiration. However here is our plan for the next 1 1/2 weeks, in no real order:

pancakes & eggs
salad & baked potato
ravioli & salad
oat & walnut patties, mashed potatoes & corn
lemoney garlic barley w/ roasted broccolini & asparagus
honey lentils w/ rice & sweet potato
lentil & rice tacos
pasta primavera
orange ginger tofu w/ snap peas & rice noodles

Tonight was my maiden voyage making honeybaked lentils (the casserole-version, with rice). I think I baked it too long because it came out a little dry, but not bad. DH liked them too.

Tonight was our breakfast for dinner night and I made blueberry waffles.

Thursday: Bean burritos, with chips and queso.
Friday: Grilled cheese sandwiches with salad.
Saturday: Spinach enchiladas, refried beans and mexican rice.

I want the oat/walnut patties recipe too

How do you do orange ginger tofu...mine never comes out orangey enough, last time I used 4 oranges plus the zest and only a few bites tasted orangey

Last night was miso noodle soup w tofu, seaweed,chia seeds and cut up cucmber, carrots,broccoli and red peppers

Tonight was brown rice cooked in veg juice w pinto beans, madeinto a cold salad w the left over raw veg frm last night with garlic, ginger, fresh dill, pumpkin seeds, sunflower seeds flax seeds, peas, corn,seaweed,diced hot peppers and a wasabi/sesame/rice vinegar dressing...basically whatever looked good thrown into a bowl

He was awesome! The topic was Homework, which at first I was kind of like "ehhh..." because we plan to homeschool (and my dude is only 2 1/2). But, of course, he didn't just talk about homework, and it was absolutely incendiary. The audience was full of teachers and administrators (and parents) and I think he might have fomented a little revolution. He is an amazing speaker, very funny and engaging. If you ever get the chance to see him speak - no matter the specific topic! - I say definitely check it out.

Last night we had biscuits and sausage-almond gravy and leftover warmed up smoky collard greens.

Last night I shamefully dropped some baked boca chik'n nuggets into a bowl and covered them with steamed veggies and sweet-n-sour sauce. It was good, though, and took less than 15 minutes!

Right now I'm making a potato and broccoli-with-asian-dressing frittata. It smells HEAVENLY! We'll have it with homemade million-grain bread. :

Last night it was enchiladas with refried beans, onions, peppers, some corn, and corn tortillas, covered with watered down salsa and vegan cheese. They were totally yum!

Tonight it is Shepherd's Pie from Moosewood Restaurant's Sundays at Moosewood. It just went in the oven...I don't think I made the gravy thick enough, but it will still be tasty. Also, I veganized this because of my allergic nursling. I used hemp milk in place of the milk and EVOO in place of the butter in the mashed potatoes. They tasted pretty good, so I think the sub went well. Oh, we are also having sauteed swiss chard with a load of garlic :

Last night we had sweet and sour tofu and vegetables over rice - recipe from Enchanted Broccoli Forest. My husband sure liked it. I thought it was fine. Ds ate all of the veggies but left the tofu. He only wants it fried.

Tonight is bean and corn enchiladas with yellow rice and avocado slices.

Last night was spaghetti in olive oil and white wine with sauteed collards, roasted chickpeas, onions and garlic. Plus a garden salad with maple-dijon dressing and bread. Simple but really good.

Tonight, I am foraging for leftovers because DH is at work and DS is sleeping already!

Last night was homemade refried bean/tortilla soft tacos...one of our fav simple meals..though not really simple since it takes an hour atleast to roll all the tortillas lol

Im not sure about tonight...dh has a gig about 3 hours away so has to leave at dinner, and I have to make a rice/bean salad for a bday party tomorro which I have to finish knitting the gift for as well, and ds has a speech counsillor referal apt at 9 am tomorro morning, which I have to get ready for since dh won't be home till 6 in the morning...GOOD TIMES!

Tonight was pasta with chard, golden raisins, and pine nuts. (Recipe from Robin Robertson's Quick-Fix Vegetarian.)

DH made dinner tonight: "cheesy egg rice" which is just rice, scrambled eggs, shredded Mexican cheese, and taco seasoning all mixed together.

Tonight is baked potato bar for DS' birthday celebration (stole this idea from another thread) with salad and (veganized) dirt cake. I'm having a heckuva time finding vegan gummi worms, so we may just have to use plastic critters.

Last night was errand night, and we brough Noodles and Co to DH at work.

Last night was tasty veggie pizza and tonight will be leftovers of either that or enchiladas. I also have some ripe avocados that I'll slice up.

The last two weekends I have made a large warm fruit compote for breakfast and we eat leftovers of that for three or four days. I had way too much fruit in the freezer from our fruit trees last summer and it needs to be used up. So, I mix several types of fresh or frozen and defrosted fruit, oatmeal, ground nuts, brown sugar, vanilla, and lemon juice and bake it all for an hour. The entire family loves it.

Last night was a orange maple syrup tofu stirfry on brown rice...very yummy

We had veggie sushi for lunch and had a bday party this afternoon/dinner so there of course wasnt alot...I made a rice and chickpea salad, and there was brushetta and a pasta salad..all w/o dairy...I did cave and have a mouthful of ice cream and felt yucky right away
