Ooh, I have the best meatloaf recipe ever! So moist and tender and flavorful, my kids ask for it all the time. (My husband always begs me to double it - but once, I did, and he ate like, 1/2 a loaf all by himself! So I tell him I won't, just to look out for his colon!)

Applesauce Meatloaf

1 beaten egg
1 1/2 c soft bread crumbs (about 2 slices)
1/2 c applesauce
1/4 c chopped celery (I omit)
2 T minced onion
1 t Dijon mustard
1/2 t salt
dash pepper

Mix all, add 1 lb ground beef, mix thoroughly. Shape into round loaf in 8x8 pan. Make depression in top.
Combine and pour into depression:
1/2 c applesauce
1 T brown sugar
1 1/2 t vinegar
1/2 t dijon mustard

Bake 1 hour at 350. YUM!

I use tomato sauce instead of ketchup because my husband is a diabetic. I also take 1/4 cup of additional tomato sauce and stir in 1/4 - 1/2 tsp of italien seasonings. Let is sit for about 1/2 the bake time of the meatloaf. Then open the oven, pull back the foil and cover with the sauce. Cook the resto fthe way. I also sometimes will take the mixture, xpread it out onto foil or wax paper , spread it out into a rectangle about as wide as my pan. Then layer muenster or mozerella cheese int eh middle, roll up the meat and transfer to meatloaf pan and cook. So every slice has melted goodness in it.

YUM! I just made this one - the only change I made was - I used oats instead of breadcrumbs and I used apple cider vinegar.

D-I-V-I-N-E

So far I haven't tried one I DIDN'T like and that's saying a lot since I typically can't stand meatloaf!

I want to try the pioneer woman's... but man, that is A LOT (and it is just my 3 yo and me.....) I might try to halve that one.

Just had to comment on this applesauce meatloaf - ADDICTIVE!

I've had the cajun meatloaf 3x now, and the applesauce meatloaf I'm making again tonight. I've had the curry one that I posted many times.

I agree, I hate meatloaf with a wild passion....however oddly enough my mil makes an amazing recipe!
1lb ground beef
1 box dried stuffing mix
2 cans of mushroom gravy or the homemade equivalant to this amount

mix the ground beef, stuffing and 1can of gravy together in a bowl. preheat oven to 350, shape meat mixture into mini loaves on a cookie sheet and then top with remaining gravy (reserving some to add on top one cooked) bake until internal temp is 160!!! YUMMY!!!

I tried this tonight and OMG it was so good and I almost fainted!

DH liked it but it was too gourment for him. DS (almost 3) wanted no part of it, which is typical for him. Oh and my cat liked it too!

I like these Cheesy Mini-Meatloaves

They cook in half the time of a regular loaf. They are nice for lunch the next day too.

Preheat oven to 350F/175C.

3/4 cup/180 mL finely chopped onion

2/3 cup/150 mL bread crumbs

1/3 cup/75 mL lemon juice

1 egg, lightly beaten

1/2 tsp/2 mL salt

1/4 tsp/1 mL pepper

2 lb/1 kg lean ground beef

1/2 cup/125 mL Cheddar cheese, grated

In a large bowl, mix all ingredients except beef and cheese.
Add the beef. Mix well.
Pack the mixture into 12 muffin cups.
Mound the cheese over each mini-loaf.
Bake for about 45 minutes, or until meatloaves are set and meat is no longer pink inside.

My family loves meatloaf!

I always make a throw together, no recipe version.

1 pound ground beef
1 pound ground pork
1/2 cup oats
1 egg
1 small onion, diced fine
ketchup or chili sauce
salt, pepper, garlic powder
worchestershire sauce

The last 10 minutes, top with a mixture of:
ketchup or chili sauce
brown sugar
worchestershire sauce

When I make meatloaf I like to mix up the meats. Our fav. is goat and pork. Rabbit and turkey is great, too!

I grate veggies in mine..always carrots and onions, but most anything found in the fridge works well. I usually use 97% lean for everything, but for meatloaf, I buy 85/15 gb and to rid myself of the fat that would normally be in the bottom of the pan, I line my loaf pan bottom with slices of bread. It absorbs all that fat that leaks out without it sitting in grease. It makes the biggest difference

I wish I could take credit and give credit for this recipe.  It's moist, easy, yummy and even my picky eater loves it.

 

P.S.  It goes really well with the mashed potato recipe.

 

 

 

Meatloaf Recipe
Ingredients:
1 package Lipton Onion Soup Mix
2 pounds lean ground beef
1 large egg
2/3 cup milk
3 Tablespoons catsup
3 Tablespoons brown sugar
1 Tablespoon yellow mustard
 
Directions:
1. Preheat the oven to 350F.
 
2. Mix the onion soup mix, ground beef, egg and milk together.
 
3. Form the combination into a well packed loaf shape in a 13 X 9 X 2 loaf pan.
 
4. Combine the rest of the ingredients and spoon onto the top of the meatloaf.
 
5. Bake uncovered, for about an hour. When done, take the meatloaf out of the pan and place on a serving plate. Let stand for 10 minutes before slicing.
 
 
Perfect Mashed Potatoes for Meat loaf
 
Ingredients:
 
4 pounds yukon gold potatoes, peeled and cut into quarters
salt and pepper
2 cups heavy cream
3 Tablespoons butter
2 Tablespoons chopped chives
 
Directions:
 
1. Put the potatoes into a large pot, add 2 Tablespoons salt, and cover with cold water.
 
2. Bring to a boil over medium-high heat and cook until the potatoes are tender, about 20 minutes. Drain well.
 
3. Heat the butter and cream in a small saucepan.
 
4. Mash the potatoes well with a potato masher until smooth and free of chunks.
 
5. Add the hot cream/butter mixture and season with salt and pepper. Mix well, adding the chives while mixing.

this is the ONLY meatloaf I will cook/eat....

1.5/2 lbs. very lean ground beef....(I have @ times added some turkey for part of the #'s)

3 to 4 C grated sharp cheddar cheese

1C fine chopped onion

1 egg

3T worcestershire sauce

3/4 C. ketchup

several slices of bacon

 

mix all but bacon well & form loaf, (or two small ones to cut cooking time)

put in pan & wrap bacon around meat

350 degree oven for 1 hr...(or depending how ur oven cooks)

 

I have not made this thru the summer, and my mouth is watering altho I eat very little meat these days

QUICK AND EASY MEATLOAF

 

2 lbs. ground chuck

1/2 c. finely chopped onion or 1 envelope onion soup mix

approximately 4" of stacked soda crackers in pkg or a handful of dry oatmeal (about 1/2 cup)

1 egg

1 can Del Monte Original Style stewed tomatoes

salt & pepper to taste

 

Mix thoroughly and bake for about 1 hr.
