Whole foods' Gluten free Vegan cheescake!

I found this at the whole foods here in Ca on our trip---thanks to whoever posted about finding it awhile ago! (kathy? or CS?)

anyway just wanted to post the ingredients---this is amazing. I got the strawberry fields forever cheesecake!---YUMM! all organic and raw

Fresh strawberries, soaked cashews, coconut, agave, soaked pecans, soaked awlnuts, lecithin, vanilla bean, cinnamon, sea salt.

I've looked in every WF I've been to since, and haven't found it so it must be a left coast thing. I had it in Las Vegas (twice) in January. Strawberry was the first one I tried too. Don't remember the other flavor. But it was like $6.95 a slice. I made one with cashew butter the other day but it wasn't that good. I've been searching for raw cashews since but have only been able to find roasted. There are lots of recipes on line if you look for "vegan raw cheesecake recipe". But the one I had in Las Vegas definitely didn't have LECITHIN in it so maybe it's a different manufacturer.

yummy! I have made a few of those- my favorite was a chocolate one w/ a hazelnut/date crust- omgoodness! I used whole raw cashews and it was pretty darn good!http://thesunnyrawkitchen.blogspot.c...decadence.html

I think that is the site I originally went too, but the chocolate recipe I didn't use from there- I did the strawberry one. I wrote the chocolate down but didn't bookmark it. I am dying to try the black forest one though there. Kathy- I got the raw cashews at Wf's not sure if you have one where you are at though. I stocked up the last time I was there as we don't have one local. YOu could check nutsonline as well. I used honey as a sweetner as well.

Now that looks yummy as well- haven't tried that one!! I am so going to have to stop at the store for some frozen raspberries and cherries!!!

The first one I did was maple walnut (used walnuts instead of cashews, but texture wasn't right). My second one was cherry. I've been using maple syrup as my sweetener and soaked walnuts in the crust with raisins instead of dates. I looked at WF and couldn't find raw cashews. I'll have to look again. I need a bigger food processor!!

Kathy- not sure if this helps or not as I am not sure if all wf's are layed out the same(only been to one) but the raw cashews I found were down on the opposite end of the bulk food aisle- Tree of Life brand- maybe they could order some for you. they were in with all the other bagged nuts
