pineapple vinegar - organic only?

when making pineapple vinegar, is it essential for it to be organic pineapple? do they use a lot of pesticides to grow factory farmed pineapples? we have such a pineapple sitting in our kitchen about to get cut and i'm wanting to make some pineapple vinegar if i can.

Pineapple scores fairly low in terms of pesticides. I use the chart here to see what items I may be able to buy conventional:

The items at the bottom are the best ranked in terms of pesticides, and the ones at the top are ranked the worst and should be only consumed if organic.

I have a pineapple. I have vinegar.
Do I just combine them in a jar to make pineapple vinegar. As easy as that?

oK. is this because they don't use a lot of pesticides or is it because people generally discard the thick pineapple skins that would prevent most pesticide exposure from eating the meat? haha, i don't mean to be difficult!

no, here is Sandor Katz's recipe for pineapple vinegar:

1/4 cup sugar
peel of 1 pineapple
water

in a jar or bowl, dissolve the sugar in 1 quart of water. coarsely chop and add the pineapple peel. cover with cheesecloth to keep flies out, and leave to ferment at room temperature.

when you notice the liquid darkening, after about 1 week, strain out the pineapple peels and discard.

ferment the liquid 2 to 3 weeks more, stirring or agitating periodically, and your pineapple vinegar is ready.
