Raw Butter

We recently found a local farmer who sells raw butter! Woo Hoo! I usually keep a stick of butter out of the fridge so that it's nice and soft to use. Can you do this with raw butter? For how long?

Until it goes rancid. Which takes a while. At our house, of course, a stick of butter is eaten in a day or two. In the summer, less time because it melts all over the plate. I don't know. A week? More if its cultured? I really never worry about butter out of the fridge. The longest I've ever made it last though was a week.

I have a french "butter pot" I use which is designed to keep butter out of the fridge and from going rancid. It submerges the exposed end of the butter in water which prevents it from oxidizing and going rancid. but I haven't figured out yet how to get the end submerged once you start eating from it. I don't think its this brand but it looks like this sort of. http://www.frenchbutterdish.com/products.php?cat=7 It is supposed to keep the butter good out of the fridge for at least a month or so. Of course, I have no clue how that little amount of butter is supposed to last that long, but its a super cute way to store butter, and when its a touch warmer, I can use really cold water. Of course when it heats up totally, I'll have to put it in the fridge, but it will help me keep the butter out a little longer.

When I have raw butter, I usually leave a pound out at a time and eat it up within a week. Never had any problems with it and it always tasted fresh.
