Soaked and dehydrated cashews now taste really sour!

I read the NT stuff about soaking them for less time, and dehydrating them at a higher temp, which I did.
They tasted great the first 3 days. I stored them in the fridge.
Now they taste really sour. I'm thinking about just roasting small batches that we need for day trips, because we were out, and that was our main snack, and we didn't eat them because they were really gross. I've never had this happen with any other nut.
Any ideas of what went wrong and how it can be prevented?

maybe they didn't get dehydrated long enough?

That doesn't sound right. I agree with PP...maybe they needed to be dehydrated a little longer? If there was still some liquid in them, they will spoil.

Okay. I'll try again. They did dehydrate for about 20 hours, at about 225.....i'll try again.
