looking for a GFCF recipe for Italian themed potluck

My monthy "what do I make for this month's potluck theme" thread...this month it's Italian. We are GF & dairy free except for butter or ghee...can't do eggs or nuts either, and I can't do rice so no rice pasta. Any suggestions on recipes? I was thinking about making some sort of soup with beans but would definitely be open to any suggestions!

Soup's a great idea--some sort of minestrone w/o noodles or with rice noodles.

You could bring a couple side dish types, like marinated white beans or white bean dip with oregano and garlic, lemon juice and olive oil and pita or something for dipping

How about an antipasto platter? Cured meats, pickled peppers (cherry or pepperoncino), roasted bell peppers, olives, etc. If you have the time, you can pickle your own onions, mushrooms, asparagus, green beans, cauliflower, carrots, whatever you can find (cheaper to pickle them yourself than to buy them). If you want you can add a cheese and a bread on the side, but they're not really necessary.

Beyond that, maybe a grain salad... not familiar with which grains are GF, but pick one and use it instead of orzo or wheat in a salad.

Or even just a basic marinated veggie salad - my absolute favorite at the local Italian deli is just onion, tomato and cucumber in a vinaigrette.

Socca probably wouldn't be good potluck food. But you could make it for yourself!

I mix up the batter the night before I want to use it and let it sit out on the counter overnight. The light fermentation takes care of the beany gross metallic taste of the chickpea flour. Come morning, we refrigerate the batter and make the socca for an evening snack later.

How about a minestrone soup but simply omit the pasta? Or roasted veggies with olive oil and spices. Although you may want something filling enough to be a meal, since it's likely there will be littler or nothing else there you can eat. Maybe meatballs in tomato sauce (and others can serve their portions with pasta somebody else brought?
