where can i find "yellow" butter?

i recently purchased nourishing traditions and i can not put it down! so i read about yellow butter being the x-factor and i went to find it-but i cant!

what exactly is yellow butter? nyc does not sell any raw products except cheese as far as i know. what if the stick says traditional european or irish butter? is that the same?

Very yellow butter is a sign of grass-fed cows (provided coloring hasn't been added of course). Brands to check out: Organic Valley, KerryGold, etc. Of course there are others including regional brands but you just have to do your homework.

ohhhhh...so it really is just the color of the butter?? what about the pasteurization aspect? is it best to not be pasteurized?

Yes, it is better for all dairy to be unpastuerized (if your going to eat it raw. It makes no sense to buy raw dairy to put in something that will be cooked imo. So If I get raw, I get raw for eating raw and high quality pastuerized for eating cooked. it saves money). If you can't get it raw, that's ok, what you really need is good quality grass-fed dairy. Cultured is particularly good.

Yes, its something in the grass that causes it to be yellow (or food dye, obviously thats not so healthy).

Pasteurization has allowed the dairies and grocery stores to get away with selling not-so-fresh milk products, so raw dairy tends to be much fresher. If the price of raw dairy weren't so astronomical where we live, we'd definitely use it for cooking.

As it is, we buy two kinds of most dairy products (milk, butter, cheese, cream), as well as both raw & heated honey. DH has been carefully trained to not use the "good stuff" in his coffee.
