Need a few starting points

Hi! I need some starting points. My son has Celiac & Crohns (IBD). We did some applied kinesiology on his and it shows he's also sensitive to corn, soy, eggs, peanuts, oats & milk. We're also gluten free from the Celiac. He's a VERY picky eater!!!! His eating habits consist of : yogurt, cheese, chicken, apples, strawberries, bananas, rice, ground beef, waffles/toast/bagels w/ cream cheese, peanut butter. That's about it. So, if I cut the other things out, I'm left w/ chicken, some fruit, ground beef and rice. I KNOW the research that I need to do. I know I'm going to buy some books and learn all about this. I just need a few ideas/starting points on what brands, etc. I can get for him? Are there ANY breads or anything without all of that? Snacks? He's very anemic and on iron right now and low weight, so I don't want him to NOT eat, which is possible for him. I'm pretty much willing to make him anything from scratch. Any quick links or quick things you can tell me to get for him until I have some more research under my belt? Thank you!

ETA: Is there a book that covers all of these allergies? I either find them that aren't GF or that aren't soy free. Ugh. I'm really struggling w/ starting this w/ him. I can't find subs for anything right now. THanks!

Check out the recipes sticky at the top of the page. And I have recipes (searchable by allergen) on my blog. I have a sandwich bread that's good (and meets your requirements). I also have a lot of "treat" type things.

I'm no expert, many other momma's here may be able to help more, but I wanted to share the following websites with you.

We are working on eliminating corn too and it has definately been a struggle. Currently we are milk, soy, corn, gluten, and tomatoe free at our house.

I use this site to help me determine what the hidden forms of corn are:

I use this site as a great resouce for living corn free - like what tooth paste is safe:

Currently our favorite is the Pork Roast in the Cockpot (having that tonight) and we just tried the chicken marsala - also very good.

(as a side note Thanks Kathy for sharing all your hard work with these great recipes - we were not cooking from scatch much when we started down this road. so it really has been great)

Good luck - its overwhelming at first but since your already gluten free you have a bit of a head start. I hope your son starts feeling better quickly.

Oh and we found this ice cream and love it. My girls also like the mint too but the chocolate has less ingredients so may be easier for you. It is so dang good - tastes very much like real ice cream. It is a bit expensive though - but definately a nice treat.

Holy cow. Looking at that corn link makes me want to pass out. After a year, the ingredients in which gluten can be found in is still over whelming. Now I have to do the same w/ corn. Ugh. I'm so depressed over this. I'm just sitting, looking at him and have no clues what to feed him for lunch.

Egg sub (you can buy them packaged, but we can't use them because of other ingredients):
1 Tbs. milled flax + 3 Tbs. water (let sit 10 minutes, or microwave on high for 1 minute) = 1 egg (turns into a glob the consistency of an egg white
This is only works with 1-2 eggs. If you need more than 2 eggs in a recipe, they're too integral a part of it, and it won't work.

I felt the same way when I read the corn list. I had to carry it with me to shop until we found some staples.

The had part for you will be a lot of the gluten free products will contain corn. Becareful to watch for xanathum gum - which is grown on corn.

I think corn is the devil - seriously it is in everything. We wanted to have brats a month or so ago - nope all brands at our store include corn syrup. Now I'm sure I might be able to get some from a butcher but I haven't gotten that far yet. I actually still haven't really researched getting grass feed meat yet either but we might have to soon. I know it would be better for us but the time to find it and the cost ... well I just haven't done it yet.

We are waiting to get DD's ELISA test results back before making any more major changes to our current diet.

Anyway just wanted to let you know you are not alone in that overwhelmed feeling of what to feed your baby when you read that big corn list, especially when you add milk, soy, egg, and gluten free to the mix too. Kathy's recipe blog has a subsitute for eggs by the way.

Good luck - takes some deep breaths - you'll figure out how to make it work.
