My Homemade Coconut "ice cream"... Edible?

I just threw this recipe together a few minutes ago and am interested in hearing some opinions out there:

2 cans Native Forest coconut milk
1/2 c. raw cocoa powder
1/2 c. dark chocolate chips
1/4 c. raw cream
1/4 c. raw honey
1 tsp. vanilla
1/2 tsp. sea salt

But I don't have an ice cream maker or a blender, so I just stirred it all together with a spoon and put it into 2 pint-sized jars (of which will constitute as 2 nights of dessert for me, if it turns out!). I don't do a lot of baking, so those of you who do, think this'll be edible???

Looks yummy!
You may have to temper it for a while before digging in... may get hard. The only difference I have found when not using an ice-cream maker is that the ice-cream is not quite a smooooooth as it would otherwise be. Ususally tastes pretty yummy though! Did you taste the result be fore freezing it? If that was yummy, the result probably will be too!

I've frozen coconut milk with a little sweetener & nothing else, it's really good. Your recipe sounds delicious! But like the pp said it freezes really hard so you will have to let it thaw a while before you can get any out.
