Home brewed Kombucha Questions

Okay, so finally got my first batch done. I grew my own SCOBY (YAAAA : ) and mixed up the brew and let it ferment. It took about a month for it to get to the right taste, but I think I let it get a tad bit too vinergary?

Anyways, I bottled it up for 48 hours with a little fruit juice hoping for it to be nice a fizzy............but it's not. Which makes me wonder if I did something wrong or if the batch is bad.

I've drank about 4-6 ozs today and it tastes just fine, probably better than store bought but there is no fizz to it. What do you suppose I did wrong?

What tea did you use? I find I get a little fizz when I use black tea but if I add 1/3 green tea then it is really really fizzy.

This page is super helpful in getting your brew just right.

Did you leave the bottles out at room temperature or in the fridge?

Thanks Rainbow for the link! There is a lot of good info there and it may have answered my questions all ready.

I used 3 green tea bags and 2 black, so a mixture of both. I also left them out and in a cupboard at room temp. Maybe it just was not warm enough, it was no where near 80 in here probably close to a high 60, so an extra day would have helped.

Plus since it was my first batch, it looks like it could be that it will just get better with time. I appreciate your replies
