It seems like I heard someone mention making a peanut butter fudge type recipe with nut butter, sorghum, and coconut oil mixed and refrigerated. I'm thinking it would be a good cheap snack or lunch for us and I wanted to make it for DD2's birthday today - for after supper. Can anyone tell me the measurements of the ingredients?

Well the one from EFLF (and I am just remembering this off the top of my head) weren't balls, but more like a fudge that you cut into squares... although I gues you could then roll them into balls.
I think the recipes went something like this:
2 c. nut butter
1 c. coconut oil
1/4 c. honey
dash sea salt
1 c. cocoa powder
mix together and pour into a parchment lined bread pan and refrigerate or freeze until hard.
I hope that is the recipe! I always add coconut flakes too!

I do 1/2 c. honey + 1/2 c. peanut butter + 1/2 cup coconut oil + 1/2 c. unsweetened coconut flakes. Chill. Then make into balls and freeze. My SIL said they were too sweet the way I made them, but to me it did the trick for my sweet craving. It tasted like the inside of a peanut butter cup.

OMG! I just made this. 1/2 peanut butter, 1/2 cup coconut oil melted, 1 tbsp. cocoa, 1/4 cup sorghum. Mix and freeze. It was absolutely delicious. We all loved it!!! That was the first treat that felt like a treat that I've had in 6 months! It's hard to believe that it is good for you at all. I think next time I will use a bit less sorghum. Maybe 1/8 of a cup because it was plenty sweet.
