rice syrup processing?

Anyone know anything about the details of rice syrup processing? I'm suspicious of it making dd react. We have Lundberg Farms organic kind. According to their web site, ingredients are just organic brown rice and filtered water.

Traditionally, it was made with amylase enzymes from sprouted barley, but gluten-free brown rice syrup uses factory-produced enzymes. Either way, AFAIK, there's some sort of fungus involved.

Thank you--I was concerned mostly about corn, but I've been reading more and more about the funguses, too.
