NPR Meals under $10 challenge

I thought some of us might enjoy this since for most of the mamas in this forum, feeding a family of four for under $10 would be a breeze. The challenge ends today: Friday, May 1.

It still amazes me that feeding 1 meal to a family of 4 for under $10 is considered frugal. If I fed our family of 5 1/2 (baby is eating bits of solids) a $10 meal that would be considered a luxury. Maby 1x a month we will cook and 'expensive' meal, but even then it would leave us with lots of leftovers.

Even though I don't think $10/meal is cheap at ALL (my entire monthly food budget is $260)...if the contest means not using anything currently in my pantry and creating an impressive-ish meal for under $10, it might be tough.

I mean...what if a recipe calls for a tbsp. of butter? You can't just pull that out of your fridge, you'd have to count the cost of the entire stick/tub/whatever - right? Or a cup of soymilk? I'd have to count the cost of the whole "jug"...Egads, that could add up.
