Scalloped Potatoes Recipes??

Anyone have a fabulous scalloped potatoes recipe???
I'm tired of mine and need to fix it for a large group soon.

I either do a cornstarch or (gluten-free) roux-based white sauce, to which I add lots of cheese, usually smoked cheddar and some smoked swiss, gruyere, provolone, whatever I have that's pretty melty. If I have some smoked gouda, I dice that finely and scatter it in when I toss the sauce with the potatoes. I slice and boil the potatoes just a short while, sometimes with onions. Then pour them into a buttered dish (oh, the sauce has butter and dry mustard in it, of course) and pour the sauce over. Sometimes I've sauteed onion/mushroom/celery in a separate pan, sometimes not. If I'm using turkey ham, I've diced and sauteed that in the pan already.

Anyhow, mix potatoes with any veggies I want. Add the sauce.

Other things which go well in scalloped potatoes: broccoli, cauliflower, white beans, chipotle tabasco.

I made these from Epicurious a couple of times... doubled the recipe and used the advice from the comments section for toning down the "greasiness." But the mixture of sweet potatoes and regular potatoes was heavenly!

I just layer sliced raw potatoes, with finely chopped onions, with white sauce. Three layers of each, starting with potatoes, and ending with white sauce. Then, I sprinkle heavily with grated cheddar.

I need to get my BIL's scalloped veggies recipe. He made them with layers of potatoes, carrots, something (can't remember - sweet potato? turnip? something), with a layer of beets in the middle. I was skeptical, but they were really good.

Storm Bride- Get that recipe from BIL!!! I'm always looking for new ways to use beets also! What's in your white sauce?

staceychev That DOES look heavenly - I LOVE sweet potatoes!

I'll try to remember to do that. He's my ex's sister's husband, and I don't have a lot of contact with him, so I always forget to get the recipe...

My white sauce is really basic...flour & butter roux, with a pinch each of fresh-ground black pepper and dried mustard...then milk.

I saw this thread and now I have scallop potatoes in the oven...

i was lazy and just used milk, EVOO and butter...no cream sauce and cheese on top


w/ butternut squash in the middle and yam/potato on the top (used 3 kinds of potatoes)

The only reason I precook the onion and potato is because I cannot wait for those to cook thoroughly. After cutting/shredding all that cheese, I get HUNGRY. : I do sometimes just slice the potatoes (and parnsips. yum) super thin and then pour over sauce, cover with a lid or foil, and bake until it's bubbly. Then remove cover and let it get brown on top.
