My basic meat spaghetti sauce goes like this:
cook 1/2 pound of ground meat (beef, venison, turkey, whatever), when nearly done add 1 diced onion & a couple cloves of garlic and some olive oil, finish cooking meat. Add 1 large can/jar of diced tomatoes and 1 can/jar of tomato paste, ~1 TBSP parsley & sugar/sweetner of some sort, & ~1 tsp basil, oregano, garlic powder, onion powder ~.5 tsp salt, and a dash of pepper, thyme, and a little red wine (or baslemic) vinegar. Add whatever veggies you like (I usually do bell peppers & mushrooms, but whatever you like/have on hand), and simmer for ~30 minutes.
My other uber yummy sauce is Fra Diavolo sauce:
Saute 5+ garlic cloves (minced) in a some olive oil. When it starts to sizzle/brown dump a big can of diced tomatoes in, ~1 TBSP chili flakes & a little salt. Cook for 25-30 minutes. Meantime, cook some shrimp (1/2-1 pound) in olive oil. When they're done, and the sauce is too (or nearly so) add them to it, along with 1+ TBSP parsley. Serve over linguine. Delicious! Apparently you can do this with scallops too (or mixture), though I've never done so
