Meat pasta sauce recipes please!

I need some inspiration! I'm in school now, and I like to have pasta a few times/week, with homemade sauce. I prefer sauce with meat, for protein (or eggs, or cheese). Right now my standbys are a tomato/bacon/onion sauce, and carbonara.

What do you make for meat sauce? I'd especially love recipes that keep well - either in the ice box or freezer, so I can make ahead.

Thanks!

i just made a delicious meat sauce using a recipe from the cookbook Apples For Jam: a colorful cookbook by Tessa Kiros. i know we cant share copyrighted recipes here but it is a beautiful Italian-inspired cookbook.

A fave around here is the following:

adjust amounts to suit your family

Heat a little oil
add chopped onions and garlic and bay leaf, oregano, basil etc
add chopped Italian sausage (or ground beef, or both)
add roughly chopped mushrooms
throw in a jar or can of tomatoes
let simmer till a little thicker

toss with pasta of your choice
serve with fresh reggiano on top

My basic meat spaghetti sauce goes like this:

cook 1/2 pound of ground meat (beef, venison, turkey, whatever), when nearly done add 1 diced onion & a couple cloves of garlic and some olive oil, finish cooking meat. Add 1 large can/jar of diced tomatoes and 1 can/jar of tomato paste, ~1 TBSP parsley & sugar/sweetner of some sort, & ~1 tsp basil, oregano, garlic powder, onion powder ~.5 tsp salt, and a dash of pepper, thyme, and a little red wine (or baslemic) vinegar. Add whatever veggies you like (I usually do bell peppers & mushrooms, but whatever you like/have on hand), and simmer for ~30 minutes.

My other uber yummy sauce is Fra Diavolo sauce:

Saute 5+ garlic cloves (minced) in a some olive oil. When it starts to sizzle/brown dump a big can of diced tomatoes in, ~1 TBSP chili flakes & a little salt. Cook for 25-30 minutes. Meantime, cook some shrimp (1/2-1 pound) in olive oil. When they're done, and the sauce is too (or nearly so) add them to it, along with 1+ TBSP parsley. Serve over linguine. Delicious! Apparently you can do this with scallops too (or mixture), though I've never done so
