So, the title says it all. We can't afford groceries this week, which really sucks. We need to use the $20 in gas so dh can get to work. We are not going to starve, thank God for my small "stock", but things are going to be tight. I guess I want moral support, btdt, cheerleaders?

So, I am just thinking out loud here...

Breakfasts:

I have steel cut oats in the crock, with home-canned applesauce, honey, flax and cinnamon - this will be good for dh for most of the week. I think I have raisins I can add for variety -- thank goodness dh is easy.

I have the stuff to make pancakes, but we have no eggs. I do have ground flax I can mix with water for an egg replacer.

Same with muffins, I have some canned pumpkin.

Homemade bread - I have dough in the fridge continuously rising (sort of like a sourdough starter but not quite) - this can be used for toast, to fill out meals. I can also make a "breakfast" bread with the above-mentioned raisins and cinnamon.

We have about 1/2 container of yogurt. I have 2 shelf stable boxes of almond milk which should last the week if I stretch them. I have some random little-bit-left of frozen fruit in the freezer as well as some canned fruit. I can make dd smoothies. We also have most of a jar of homemade jam left, she can eat this on toast as well.

Lunch: this will be a toughie. We have a lot of rice and beans so dh and I can be good with that in different varieties (mexican, curry, etc I will pack his lunch) but dd is pickier. I have some homemade veggie patties in the freezer she most likely will eat.

We have about 2/3 bag of fresh broccoli, dd likes this so I can use it as a "side" during lunch. We have a few boxes of ww pasta I can make for her through the week. I can puree beans in a sauce for protein. I can also make hummus, although I don't have tahini. I think I can improvise though. DD likes this and I can make homemade crackers pretty easily. Oh, we have a half a block of tempeh and dd will eat this sauteed.

Oh, also I make this chickpea and lentil "salad" that is akin to a chicken or tuna salad, that we can have in sandwiches. I think I have a little thing of mozzarella in the freezer, and canned tomatoes - I can make pizza for us. Oh, a few mushrooms and half a bag of spinach too.

Dinner:

Hmm, we have a bag of veggie ground "beef" in the freezer as well as some veggie ground "beef" I made from lentils. I can make shepherd's pie with this, frozen peas and onions, and mashed potatoes.

We have a log of polenta, I can make this with some frozen veggies steamed.

Again, the rice and beans. Thank God I have spices and knowledge of cooking. I can make a couple different variations.

Also, we have pasta, a few boxes. I can make a homemade cream of mushroom/pureed bean stroganoff type thing that is pretty good - high in protein.

Thank goodness for frozen veggies that I stocked up on, we ran out of most of our fresh and can't afford any this week -- they will supplement meals and add nutritional value.

snacks:

Apples, dd likes these, especially with nut butter, but we have none She likes them plain though, too.

Home-popped popcorn

roasted chickpeas

canned fruit - it is not ideal but we have a few cans in fruit juice (not syrup) and it is better than nothing, right?

home-canned applesauce from mil's apple trees

Some random things:

We have some dry cereal that can be mixed with raisins and some random almonds and sunflower seeds to make a snack-type mix

We have a couple of sweet potatoes I can make into fries as a side

we are good on vitamins

Typically dd gets a lot more protein in her diet - I think I can get away with pureeing a lot of beans and putting them in things (white beans in muffins etc).

I am grateful for what we have - but typically in a week we do have more almond milk, eggs, nut butter, more fresh veggies and fruit, and cheese - of which we have none this week (except we do have some almond milk). I think I can afford to buy a dozen eggs, which will help with the protein factor.

Bananas make a good replacement for eggs. And, I had an argument with someone once about whether hummus had tahini in it at all, so it must taste OK that way! Chickpeas also make felafel, might be a texture change from the rice and beans?

I totally feel ya girl. Except I have about negative$130 to get me through 2 weeks. Sigh.

But it really sounds like you've thought it through and have some good ideas for your meals. Personally, I'm going to go to one our local food pantries. Do you have any local charities that will help you out? Do you have any other options for help? Any family around that you can maybe mooch a dinner off of?

Take a deep breathe. It sounds like you have a good amount of food to get you through the week. I'm in a very similar situation. I just keep telling myself we have all we really need-a full stocked pantry, formula for dd, the means to pay the rent and the electic bill. The internet and phone bills may have to wait, the rent next month may even be a few days late, but we'll have a roof over our head.

BTDT mama, you can do it!!! Think of it as a challenge, and it can actually be sort of fun!

Sounds like you have some baking stuff, so try to bake some "treats" so that you, dh and dd don't feel totally deprived!

Also, baked oatmeal might add some variety and be something that dd could try too!

Canned fruit in juice is def. better than nothing imho.

WOW- I am really impressed with your creatively and skill with cooking. Your meal plan sounds really good!!!
I have substituted applesauce for both eggs and oil in baked goods with fairly good results.

I've used a baking powder + oil + water mixture as an egg replacer with good success.

remember to save the juice from the canned fruit to put in the smoothies or to use as syrup/dip for bread for DD as a sweet treat.

You sound like you have a great plan and I'm really impressed that you have a good stock to get you through. GO mama!!!!

Ahh.. welcome to my world.

We have about $11 to get through until Friday, and then after Friday we will have like $65 to last 2 weeks.

AND, this week, with that 11 bucks, i have to find a way to fill my prescription and take dd to the doc if she still is running a fever today (day 3). the medicine is about $8 and i can't go without it, the copay at the doc is $15. i am hoping the doc will bill us, and the pharm. will let me buy just enough pills until Friday.

My plan is similar to yours. i am making mayo today, since we are out. I am also making bread, rice pudding, waffles, yogurt, potato pancakes, quick bread, lemonade. then we will have a nice base of comforting food for my sick dd, and everyone else.

this will be extra adventurous because our oven doesn't work, so all baking will be done in the bread machine. lol

Yes to everything mentioned here. You're eating better than most people I know (and it's not about the money issue either!). Sounds like some very good balanced meals you listed but if they're not quite up to what you usually eat, don't worry. One week of "not so good eating" won't make a huge difference in the grand scheme of things.

I think you'll get through this amazingly well. You sound like a very creative and knowledgeable cook. :

Just a comment that your meals sound actually really wonderful. I know it may not quite feel that way when you're using what you have, versus feeling like you might have a choice to go out and get other supplies. But your family sounds like they will be well nourished.

If you have any coconut oil I find that making popcorn in it makes for a filling and inexpensive snack.

Try mashing your sweet potatoes with white beans and rice (ground flax to bind) to make patties to pan fry. Use whatever seasonings you like or try using curry and cumin.

If you end up getting some eggs, those breakfast casseroles go far and can be eaten any time of day. Eggs, almond milk, bread cubes, dry mustard, a little spinach/mushrooms, veggie meat.

Good luck mama, it looks like you have taken control of your situation as best you can. I have a feeling that with you in the kitchen your kids won't even realize things are tight. Great work.

Applesauce will work well in your pancakes & muffins as an egg replacer, that's what I always use. It's good on top of pancakes, too, if you're out of syrup. You can make bean dip out of any bean, with various seasonings, that are good with homemade crackers or even eaten with a spoon. Your plans sound really good...good luck!

Thanks so much for your kind words and encouragement mamas! Dh and I would be fine, and thanks for the compliments to my *creative* meals, I think I would have done well in the depression, the way I can throw stuff together

However, dd is a lot pickier due to sensory issues I think.

I have a great update though! A really kind stranger pm'ed me and offered us some help, which will get us enough for dd this week - eggs, cheese, nut butter etc. It will come in SO handy, so if you are reading kind mama, THANK YOU.... THANK YOU!!

So, for breakfast dh had cockpot steel cut oats

dd had a smoothie I made from a tablespoon of yogurt, some almond milk, a couple frozen strawberries, a teaspoon of all fruit jam, some garbanzo beans (true! you can't taste them and they add protein, fiber, iron etc) some ground flax seeds, and ice.

I had that chickpea/lentil "salad" wrapped in a corn tortilla.

Morning snack: popcorn sprinkled with sea salt, ground flax, and honey

Good luck to you. It sounds like you've got a great plan.

Ditto to the person who asked if you can mooch off someone for a meal. Anytime we go to my mom's we end up being invited for dinner. Do you have someone like that? It'll at least help stretch your meals a few days.

Is this a one time thing? Are you going to be able to build your stockpile back up quickly? It sounds like you had some really sensible things stored
