Elk and deer meat.....

Thread Starter
We have a lot of elk and deersteak (all different cuts), deer chops and a little bit of ground deer/elk. I have a hard time finding ways to cook it so it doesn't taste too wild. I know that you can soak the ground meat in milk to get rid of the wild taste...but no way I'm wasting milk. Any ideas or recipes for wild meat?

We eat a lot of deer around here (OK, not much lately since I'm severely red meat averse, and really just meat averse in general atm... but normaly!! , and I just cook it like beef.

We eat quite a bit of it too - I generally just cook it the same way - though I prefer to use wild meat in dishes that have some sort of sauce or extra flavors (lasagna vs. a plain burger)...I find that slow cooking elk/deer/moose/whatever roasts really helps them turn out tender. :

Different types of stew

I had a similar dish in Switzerland and then made this Venison with Chanterelles in Cream Sauce and Braised Red Cabbage
for DH's bday last year and it was absolutely amazing. Obviously you could simplify the stock somewhat. I used other types of mushrooms though since I couldn't get chanterelles/Pfifferlingen. here that time of year

But a simple goulash (brown meat in oil, add paprika, tomato paste, a little flour and water) is always good too.

Have you googled for venison recipes? There are tons of American ones. I've had lots of delicious wild game dishes in Austria and Switzerland so maybe do a recipe search for Hirsch and rezept and then use a web translator to view the recipe in English.

We eat quite a bit of venison. Use it like beef, no soaking necessary. I particularly like venison meatloaf and stew. If you have some tenderloin, marinate in your favorite sauce and grill it. Or pan fry in butter with some onion and mushrooms. Mmmm. Make Venison fajitas, or use the burger for tacos/burritos. There are so many possibilities---and eat well knowing it's wild, lean meat the way nature intended, and full of B vitamins. Good stuff, enjoy!
