Can I freeze these things?

I spend way too much time in the kitchen cooking so I'd like to cook at least 5 meals on Sundays and freeze them for the week. I've never been much of a cook so I have tons of questions! I'm wondering if i can freeze

chicken salad
veggie soup ( beans, zucchini, squash, tomatoes, carrots, green beans)
potato soup
mac and cheese

there is more but i'm drawing a blank Also, what do you use to freeze your food in? I keep hearing about plastic zip lock bags leaching poisen into the food!

I do know that frozen potatoes are AWFUL. And as for the mac 'n cheese, I'd freeze it before it was cooked, then when you want it, pop it in the oven. The veggie soup should be fine and I *think* your chk salad should be fine but, it depends on what's in it and if it will be served cold or hot.

The best thing to freeze in is pyrex or canning jars like Ball.

If you puree the potatoes in the soup, it will be fine. I freeze French potato soup all the time. I also freeze corn chowder and fennel and potato bisque, which each have small potato chunks. The potato gets a bit grainy, but I don't mind it in the soup. Veggie soup is fine frozen, too.

I've never frozen chicken salad, but I do freeze cooked and shredded chicken. I take it out of the freezer in the morning and it's ready to add the dressing and veggies to mix it into chicken salad by dinner time.

With mac and cheese I freeze the cheese sauce, then boil the pasta and bake it when I want it. Never tried to freeze it already mixed.
