I made cheesecake for our Mother's day party today.
4,8 oz. pckgs of cream cheese-so 2 lbs. (you can use reg.or low fat)
stevia (to taste, depends on if you use liquid or powder)
5 eggs
1 tsp vanilla
Use mixer to blend until smooth, pour in oiled spring form pan.
The recipe calls for baking at 200 degrees overnight or 6-8 hrs. If you baked at reg. temp for a shorter amount of time it would probably work, but I've never done that.
I swirl in real fruit jelly into the batter before I bake (I used blackberry for today).

I'm diabetic and I noted this from somewhere on the internet - to use later.
NO SUGAR DESSERT
1 stick butter (melt)
1 c. flour
1/4 c. nuts
Mix top ingredients together. Pat in 9x13 pan. Bake at 375 degrees for 15-20 minutes until lightly browned.
Mix: 2 1/2 c. milk 1 pkg. (8 oz.) cream cheese
Beat until smooth and well blended.
Cover with fresh fruit - strawberries, raspberries, blueberries, or peaches, or your choice.

banana bread, double the fruit, hold the sugar. make it all the time, my pastor loves it. Or carrot cake with lots of spices, hold the sugar, sweeten with either stevia or even better, applesauce. double the carrot too.
Also, look up a recipe for "war cake". A TRUE war cake is egg, butter, milk and sugar-less.
But still tasty, best served with honey butter or cream cheese spread.
