Cookie recipe with no gluten, nuts, dairy, sugar or fruit?

Anyone have a good recipe? I could experiment but sometimes I like knowing someone else has already tried it and it works

We do xylitol in small amounts but subbing 1:1 in sweet recipes is too much for my system. We can't do any other sweetener (candida diet). We need something to snack on that's a little sweet!

I have no ideas except to ask... What about stevia?

What about coconut? You can use coconut flour to make cookies, muffins, or little pancakes. Really good with some cinnamon and spread with butter. I highly recommend stevia as well.

I have some stevia drops but haven't used them too much for baking. Is there another form of stevia that works better for baking?

I do have coconut flour...good idea, I should look for some recipes using that. I can't use it 1:1 for flour can I?

What about pureed sweet potato or squash? That would sort of hold it together and sweeten it a little.

Try this link. She uses erythitol- but also says xylitol as well. I believe the Banana cupcakes(using some sweet potato or other squash instead of the bananas) and brownies fit your criteria- just leave out the nuts of course and instead of butter use some coconut oil or palm shortening. You don't say anything about chocolate being a no-no- she uses unsweetened.

Wow, that blog looks great! It looks like just what I'm looking for. Thanks for the link. I'll definitely try some of her recipes.

Here is another recipe. I would just use coconut milk for the cream and leave out the nuts of course- they just go on top anyway.

Oh- and on the coocnut flour it has to be a specific coconut flour recipe. It works nothing like regular flour as the fiber content is so high. I've yet to see a recipe that isn't chock full of eggs either.

I have the coco flour cookbook and he makes lots of recipes lower in sugar- he cuts the sugar by about half adds some stevia drops- about 20 for a recipe for 6 cups. You could do some experimenting and do the xylitol for the sugar portion and add some stevia as well. I was reading that with the alternative sweetners it is good to mix.
