Peanut Butter Balls for Snacks?

Several times in "What to Snack on?" or "Easy Lunch Items"-type threads, I have read about peanut butter balls for snacking.

I LOVE peanut butter.

The only PB-balls I know abuot are like Buckeyes---covered in CHOCOLATE! how do YOU make "snacky" and NT-friendly peanut-butter balls?

Yummm.
Equal parts coconut oil and some sort of nut butter. Add honey to taste. Chill. Shape into balls. Roll in chopped nuts, coconut or cocoa powder.
You can also add the cocoa powder to the mixture for a more fudge-like experience.
I store mine in the freezer 'cause I like them COLD. I think most people keep them in the fridge so they hold their shape.

I've never made this, but I hope someone posts a recipe soon! It sounds delicious!


I searched on RecipeZaar.com and found nothing particularly healthy... but that is a great resource if you've yet to check it out.

PB/milk allergic here but had to chime in with our favorite

1/4 cup pumpkin seed butter or sunflower seed butter
1/8 cup honey
1/2 cup "Better Than Milk" Rice Powder
1/2 cup unsweetened oat O's cereal, crushed
1/4 cup unsweetened shredded coconut

Cream seed butter and honey than add "Better than milk" powder, and crushed cereal in a large bowl. Shape into 1 inch balls. Roll in coconut. Chill. Makes 12.

1/2 cup nut butter
1/2 cup raw honey (or a little less)
1 cup coconut flour (I just food process shredded coconut)
1 cup oatmeal (I also food process this for a smoother texture)

Mix together and form into balls.

I do equal parts honey, peanut butter, coconut oil, and sometimes flakes coconut. I store mine in the freezer too. Some people say I make them too sweet but I think they taste like the inside of a Reese's Peanut Butter Cup. YUM!!

These are really tasty. They call for almond butter, but I'm sure you could sub pb with no problem. I don't know if they're TF friendly or not, though.

Thanks for the great thread! I just made some really basic ones this afternoon - and they're fabulous for dealing with the late afternoon snackies I've been getting with this pregnancy. Great way to get the CO in, too!

I use nuts not the nut butters and they hold together better so you can press in a pan then cut in cubes if you want.

I do half nuts half dates in FP with some coconut oil and raw cocoa powder, sometimes dried cherries too or coconut flakes, etc.

I made some last night and I really liked them-used equal parts peanut butter,coconut oil some honey and cocoa powder. Then rolled them in shredded coconut. Almost forgot I also used a little oatmeal because it seemed kind of runny? Not sure what happened. Regardless, they ended up really good. I was hoping my 2.5 yrs old would eat some but he hates peanut butter. Strange because he likes peanuts. Those if you that use cocoa powder-how much do you use? They are an awesome healthy snack!!

we love peanut butter balls. you can make carob ones using equal parts nut butter, honey and carob too! I like to add about a cup of crushed o's cereal too for crunchy ones.

Well, my peanut butter concoction has been chilling in the fridge almost 36 HOURS! Whoops!

We had a Hockey party last night, and I made the PB/VCO mixture Sunday night. I PLANNED to make the balls yesterday, but with the party...the day just got away from me.

TODAY, I am "balling" that PB up and rolling in teh coconut! Can't wait!

On a side note, as my husband is pouring the 1 cup of VCO, he looked at me and said, "WOW! These are going to be some EXPENSIVE PB balls." He was remembering how much we pay for our VCO!

They're runny at the beginning (make sure you stir your nut butter if it's the natural kind, so the oil is evenly distributed throughout). Put them in the fridge to firm up a little. Then scoop and make into balls. Then I store them in the freezer.

I can't have chocolate so I don't know the answer to the cocoa question. Though if I did it, I'd dip the frozen ball in some melted chocolate chips instead!

Yesterday, I made a second batch. This time I put more cocoa in and OMG they are awesome. Even better than the first. Now I just have to control myself so I don't eat them all.
