a delicious salad to take to a barbecue?

any great suggestions out there with possible recipes or links to recipes? thank you....we have been invited to two this weekend.

I like a simple fruit salad (almost any fresh fruit will do) with a dressing of yogurt, lime zest and honey.

avocado, tomato, black olives dressed with olive oil and a little salt and pepper. if you eat cheese, throw in chunks of pepperjack.

Spinach salad with berries, goat cheese, nuts (toasted in a pan and tossed with sugar) and balsamic vinaigrette.

Lettuce with mango, thinly sliced red onion, cucumber and a honey-lime vinaigrette.

I have had great luck with Moosewood and collect the cookbooks.

I noticed only a couple of salads here though: mediterranean lentil, asparagus and snow pea, and spicy cucumber.
You could try a noodle dish cold as a pasta salad or a vegetable dish like broiled mixed veggies or dilly beans.

CouCous/Veggie Salad - This is an awesome salad for a cook out and so great for summer. This is always a hit!

Make a box of plain coucous according to directions. When the couscous is done and still hot, add a bag of baby spinach. Stir to mix and wilt spinach. Let cool.

Once couscous is cool, add the following and mix:

1/4 cup chopped calmatta olives
1/4 cup chopped basil
1/4 cup toasted pine nuts
2 TBL of chopped sun dried tomatos
1/2 cup crumbled feta or goat cheese

Drizzle with olive oil and lemon juice and mix again. Salt and pepper to taste. This is very yummy and you can adjust the ingredients to suit what you like. I always add more pine nuts, more feta and more olives but sometimes decrease the tomatos depending on my mood! Cucumbers, goat cheese, diced chicken, artichokes or peppers would be great additions to this salad too.
