What's the function of powdered milk in recipes?

And what can I use instead? I'm dying to try this gf lavash recipe but I'm not sure if I can just leave out the milk or what. Ideas?

IIRC, it adds more protein.

I think hapmama's right. I've seen it replaced with non-dairy powdered milk, protein powder and almond flour, so I think it's all about the protein.

I have rice protein powder that I use in some things (that DS isn't going to have) when it calls for powdered milk.

I have seen it recommended to use almond flour as a replacement, so that is what I do. If you can do nuts it is a good option as they aren't processed at all.

Thanks everyone. I looked at the recipe again and it called for buttermilk powder, not just milk, so I added some extra acid and used rice milk in place of water. The lavash bread came out GREAT. Soft, pliable, not the least bit fragile, and it's held up on day 2 so far! Yay. It was really easy and quick to make (didn't even have to proof the yeast), and it made enough for 4 wraps. It will make packing a sandwich MUCH easier. Now if I could only get dd to eat deli meat

What do you do instead of deli meat? Roast beef and turkey that you cut up yourself?
And I totally have to try that recipe.

I looked over that recipe some more and I am going to use that for our gyros Tuesday. I had a Teff pita recipe I was going to try, but this looks so easy and cool I gotta try it. Now here's hoping my coco yogurt tzatzki sauce comes out well and we'll be in heaven!

If that tzatziki turns out, could you post the recipe? I've been dying for a gyro but it just doesn't seem "right" without tzatziki.

Jacquenline, I eat Boar's Head deli turkey, but dd won't eat any sandwich,except bread with jam She doesn't like nut butters and she's allergic to seeds. She's just never had sandwiches so she's not used to them. I want to smear my lavash with hummus and roasted red peppers. MMMMM. In a former life, I would have added some goat cheese, too

Crunchy, tell me how you make your gyro meat?

I do a super easy gyro that I seen posted on Mothering years ago. I take the ground lamb season generously w/ sea salt, chopped garlic and mint. Form into a loaf and cook until done like meatloaf and then slice thin and cook a bit more. Works for us. Come to think of it I should look up an actual recipe, but I have always made it this way as it is easy and yummy.

I have this recipe in the oven right now to test it for super. I am using my(I think nasty BRM's tapioca) - hoping all the spices cover it up. This is for gyros so I used cumin, coriander and mint as my spices- next time I might add some cardamom. The recipe was super easy to do- so my fingers are crossed.

Can't wait to hear how it comes out! How big is yours? I mostly filled a cookie sheet.

First batch is good except for the nasty tapioca- I am giving up on it and writing the company. I bought some potato starch today- so I will use corn and potato. The recipe was super easy to throw together though and the texture is great. If I can get it right this is my new pizza dough- !

I loved this recipe and made it all the time - great for pizza doughs. But now we are egg free. Has anyone made this sans eggs or used a replacement? I have found that using flax goo makes it less appetizing.

Just an FYI. I made the lavash again just now and I didn't have tapioca so I used arrowroot. Besides making the bread slightly more bitter, it also didn't brown. I kept increasing the time, waiting for it to brown and it never did, so now I have overcooked lavash. Duh me I'll just have to slather lots of mayo on it

I didn't think of it until you said so, but I wonder if that's the problem with crunchy mama's tapioca flour? I think I've seen people use the terms interchangeably before... So maybe BRM's "tapioca" flour is really arrowroot?
