Looking for a really nice wheat bread....

Hi there.

I make our bread each week (3-4 loafs at a time). I use the stand mixer to mix the dough with a dough hook with one recipe and knead it by hand with another I have tried. I use half bread flour and half wheat. My family tends not to like or eat 100% "whole" wheat bread.

I am not IN LOVE with either recipe that I have tried and am looking for one that I will really enjoy and that will make multiple loaves to last through the week.

Does anyone have any suggestions?

What is dough enhancer? I have not heard of that. Is it good or bad for your body?

I forgot to ask, why do you like this bread so much? What is good about it that your family loves?

This recipe is the BEST bread recipe EVER. It produces soft sandwich style bread and the 100% whole wheat recipe pleases even the wonder bread liking folks!

1 cup warm water
1T yeast
1/4 cup honey or 1/3 cup brown sugar
2 3/4 cups whole wheat flour
1/4 cup wheat gluten
1 tsp salt (table salt)
2 T instant dry milk
1 T butter or oil
1 T vinegar
1/2 cup cooked, plain mashed potatoes

Knead for 10-15 minutes. Let rise under towel until double 1.5-2 hours. Punch down and shape into loaf and put in pan. Let rise again until double. Bake 20-30 at 375 degrees.

I am not sure exactly what dough enhancer is, but I know it has soy in it.

I LOVE the Buttermilk Bread recipe from Laurel's Kitchen Bread Book. You might be able to find the recipe online without buying the book, I am not sure. I will say that it calls for 2 tsp of yeast and I prefer to add 1 Tbl. I love it because the texture, taste, and smell totally rocks :

I haven't made the buttermilk bread, but Laurel's Milk Bread is my standard. Works well for sandwiches, and stays fresh for almost a whole week.
