2 thumbs up- Coconut Whipped Cream!

I had a whole bunch of fresh strawberries from the garden so I had to try coco whipped cream. By itself it was nothing remarkable but mixed w/ strawberries and sprinkled w/ a bit of turbinado it was yummy- the texture wasn't as fluffy but pretty darn good. It would be supper yummy mixed w/ some sugar and chocolate or orange or whatever else for a lighter frosting.

So, how did you make it? Did you just use the fat that sits on top of the coconut milk? Sounds yummy!

Do you whip it with a little sugar like a regular whipping cream (which I never did master and now I don't have to, without dairy!)?

I have a frother, like for coffee, that I got a couple years ago so I could do steamers with flavoring. I haven't tried coconut milk in it but I wonder if that would whip it like whipped cream too?

I just took the fat off the top like you said CP but made sure to put it in a bowl w/ the beaters in the frig to let it cool down first.

Kathy- I never added sugar to homemade cream before. I didn't know you were "supposed" to but it always turned out well and we loved it, but I never really ate it plain. This would play well with other flavors so as to tone down the coconuttyness. I think next time I order MRH I am going to have to buy some vanilla beans as that would be nice.

Here is an actual recipe I just found- it said you can use agar agar or gelatin to thicken it. It also has you add powdered sugar and vanilla as well. Will have to try that out.
