Help me use my ground beef!

I am trying to figure out what to make for dinner with ground beef. I am tired of the old stand-bys: hamburgers, meatloaf, tacos, cottage pie, meatballs.

Can you please share your alternates?

Do you eat pasta?

You can make pastitsio. It is kind of like lasagna. I use lamb but beef would work too. You will need some elbow macaroni, some tomato sauce or canned tomato, bechamel sauce (milk, butter, flour), egg, parmesean cheese, and nutmeg.

It is yummy and really easy to put together.

I cook a pound of pasta and a a pound of meat. I mix them together in a baking pan with the tomato sauce and some nutmeg (I think traditionally you layer it but it all gets mixed up anyway so I just throw it in together).

I make 3 cups of bechamel - 3 cups warm milk added to 3 tbls flour cooked in 3 tbls butter. I beat 2 eggs, then add the warm bechamel a spoonful at a time so the egss don't scramble. When the gg mixture is warm I add it to the bechamel. Then I add the cheese and some more nutmeg. I let it sit until it is cool and thick. Then I spread it over the pasta and put the whole thing in the oven for 30 minutes at 350.

I make hamburger quinoa casserole with ground hamburger sauteed with onion and garlic, mix in some cooked quinoa and sauteed vegetables (whatever you've got on hand, last time I used zucchini, broccoli, carrots, and sweet potatoes). Add some stock to give it some moisture and eat up!

my family is always asking for this i think we have it almost once a weeks

Spanish Rice With Beef


6-8 slices bacon
1 medium onion sliced
2 cloves of garlic
1 1/2 pounds ground beef
1 cup regular uncooked rice
2 8oz cans tomato sauce
2 cans diced tomatoes
2 cups hot water
salt and pepper


Cut bacon into pieces and fry until crisp, Remove drain most of the
grease and add the onions, garlic and hamburger
cook until done. Add rice, tomato sauce, water bacon and salt and
pepper. Bring to a boil then simmer for about
25 min. or until rice is done.

This recipe calls for ground turkey, but I've used ground beef before and it's delish!!!

I'm actually getting 10lbs. of ground beef in the morning and making some freezer meals. So far this is what I'm planning on using it on:

Taquitos
Sloppy Joes
Meatballs
Lasagna Roll Ups
Chilli
Upside-Down Deep Dish Pizza
Stuffed Green Peppers

Köfte are these Turkish meat patties that are a cross between a meatball and a hamburger. The spices are different and they're shaped like little footballs usually, and there are a dozens of different ways to make them. We have our family favorite, but HERE is a wonderful list of a bunch of different ways to make them.

Another way we like ground beef is in hobo bundles that are cooked right in a fire (our woodburning stove or campfire). You can tweak the following basic recipe to your own taste in vegetables and seasonings:


1/4 pound ground beef
1 potato -- sliced
1 carrot -- sliced
2 tablespoons chopped onion
1 (18-in. x 13-in.) sheet heavy-duty aluminum foil
Salt and pepper -- to taste

Place raw ground beef in the center of foil with potato, carrot
and onion. Sprinkle with salt if desired and pepper. Fold foil over and
seal well; place on a baking sheet. Bake at 350' for 45 minutes. Or put foild directly into fire, rotating to cook evenly. Open foil carefully.

This sounds like the "Hobo Dinner" my hubby makes. Except he browns the meat in a skillet, then adds the veggies (and sometimes beans, too) and cooks until they are tender. Then he serves it with shredded cheese on top. Mmmm. :
