Help me develop this recipe idea...

Ok we love smores, obviously, I mean...who doesn't? LOL

So I'm thinking of a way to make a s'more pocket thing that doesn't turn to mush, has a distinct marshmallow and separate chocolate layer within a graham like/based crust.

Something that can either be tossed in the oven or a toaster oven for a bit to crisp up and 'goo' the middles.

Anyone have some suggestions on how to make this work? I've tried regular pie crust and it just doesn't cut it. Then with the filling it's always been frustratingly mixed together, not enough separation between the layers and it turns to absolute disaster on first bite.

Suggestions? Ideas?

How about using a recipe for homemade graham crackers? Roll, cut, fill, press the edges together, then bake until crispy.

If you get it figured out, I want to try! :

Graham Crackers:

2 cups whole wheat flour
1 cup unbleached all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup butter, softened
1/2 cup packed brown sugar
1/3 cup honey
1 teaspoon vanilla extract
1/2 cup milk
cinnamon sugar mixture (optional, but very much suggested! )

1.Sift together the whole wheat flour, all-purpose flour, baking powder and baking soda; set aside.
2.In a medium bowl, cream together the butter, brown sugar and honey until light and fluffy. Stir in the sifted ingredients alternating with the milk and vanilla. Cover dough and refrigerate overnight.
3.Preheat the oven to 350 degrees F (175 degrees C). Divide the chilled dough iinto quarters. On a well floured surface, roll the dough out one quarter at a time iinto a 5x15 inch rectangle. Divide into rectangles using a knife. Place rectangles ointo ungreased cookie sheets. Mark a line down the center of each one, and prick with a fork. For a cinnamon flavored cracker, sprinkle with a cinnamon sugar mixture before baking.
4.Bake for 13 to 15 minutes in the preheated oven. Remove from baking sheets to cool on wire racks.

So you could probably make this dough, cut out circles, place a thick square of dark chocolate on one half, place a marshmallow on top of that and fold over and crimp like a dumpling. Then I would bake them for 12-15 min. The chocolate should be melty but not too melted and the marshmallow on top. if that doesnt work, why not try cutting out three circles. On one circle place the chocolate, then a circle on top, then marshmallow then another circle. Dampen the edges with egg white and pinch together and bake?

Let us know how the experiments turn out! Now I want to try making something gooey and delicious!

The above. I also might try brushing a light egg white/wash layer between the chocolate and marshmallow and perhaps that would provide a barrier to them mixing when reheated?

Also, the give the chocolate a bit more non-melty time, try freezing it before placing it in the s'more 'dumpling'. This might give you a bit more time with regards to melting.
