What to do with ground turkey?

I am desperately trying to break my DH of his addiction to red meat - he would eat beef every night if I let him. Does anyone have a great ground turkey recipe that they would be willing to share? I haven't really cooked with it all that often and am hoping I can show DH that it can be just as good, if not better, than the alternative.

We have used it for years in tacos and chili.

I know you can make really good hamburgers on the grill with it.

Also meatloaf is delish with it.

I use it for anything one might traditionally use ground beef - tacos, burgers, meatballs, meat spaghetti sauce, meatloaf, etc.

Just be sure to get the regular and not the low fat. The low fat is quite dry and can be good but it's not at all useful for converting someone accustomed to beef.

I've used it in place of ground beef in meatballs. (Approx 1 lb ground meat, 1 egg, 1/3 cup dried breadcrumbs or ground up crackers, 1/4 minced onion and 2 minced garlic cloves--mix together, shape into 1 inch balls and bake at somewhere around 325 for 30 minutes or so.)

Then the meatballs go in red sauce over pasta or they get covered in bbq sauce and served with bread or they get covered in sweet and sour sauce and served with rice. The sauces might help if he's going to object to the turkey instead of beef. But the substitution was fine around here.

I had a lot of trouble getting DH to make the switch at first, he was a big time beef eater. Part of his problem was that turkey looked different b/c it's lighter in color. Instead of going "cold turkey" , I started out making everything half beef and half turkey and then gradually increasing the amount of turkey. I also add worcheschire to things like burgers that are mostly meat, b/c it darkens it. It took a while, but now we eat very little ground beef, and he doesn't notice the difference. We use turkey anywhere we would normally use ground beef.

my husband raves about these turkey burgers and asks for them instead of beef!

1.5lb ground turkey,
1 egg,
probably about .5 cup breadcrumbs,
a generous squirt of ketchup,
a tbs soy sauce or worcestershire,
a few good shakes of thyme, parsley, cumin, cilantro, oregano, the kitchen sink...

mix, and remember that turkey can be pretty damp so maybe take it easy on the liquids until you know how your mis is turning out. like add the ketchup and sauce as you mix.

form into patties and grill. if you like mayo, be sure to add that as a topping, it really sets them off.

makes 4 big burgers

I just make sure to season it really well. Because it can be kind of bland. Lots of onions, garlic and whatever spices you need for the recipe.

Turkey Gyros

1 lb. lean ground turkey
1/2 C. chopped onion
2 tsp. minced garlic
3/4 tsp. salt
1/2 tsp. dried marjoram
1/2 tsp. dried rosemary
1/8 tsp. black pepper

I'm heavier handed with the seasonings also add some fresh lemon juice as well. You can crumble the mixture as you fry it, or sometimes I shape it into small, thin gyro sized pieces, they get crispier that way.

My best friend makes turkey burgers that are super yummy! She puts an egg, shredded zucchini, onion and apple in them, and adds some breadcrumbs so she can form them into burgers. . .I'm not sure what spices she uses, but wow, I totally love them when she makes them! I've found you can sub ground turkey in any recipe that calls for ground beef. My FIL actually won a chili cookoff (some Harley Davidson thing he went to) and he uses ground turkey in the recipe!! Just make sure you check the package--some ground turkey has extra ingredients.

I started making tacos, meatballs and meat sauce with ground turkey and my DH didn't even notice the change. I like all three items much better with the turkey. I haven't tried burgers yet but maybe I will venture there next.

I second the idea of starting out half turkey, half beef. Then you can start adding more turkey, and add paprika for a more red color.

This.

I'd start with something really savory and saucy (like chili), because the meat can be better disguised (not that it had much taste at all). I wouldn't do a straight-up plain turkey burger, because that is much more different from beef than a chili made with turkey is from a turkey made from beef, for example.

Yup. Make him this. It's yummy! My DH *hates* when I make turkey burgers (ground turkey with feta and chopped spinach mixed in) because he's a total beef/cheeseburger guy. But he looooves this chili, especially when I make it really spicy. (I use Pace hot picante sauce and jalapeno jack cheese.) It's from All Recipes. I made this once for a chili cook-off and won 2nd place.

: WHITE CHILI

* 1 pound ground turkey, browned
* 1 cup salsa
* 1 cup frozen corn kernels
* 1 cup water
* 2 (14 ounce) cans great Northern beans, rinsed and drained
* 1 (8 ounce) package jalapeno pepper Cheddar cheese, cubed or shredded

In a large pot or saucepan combine the browned turkey, salsa, corn, water, beans and cheese. Stir together and simmer over low heat for about 30 minutes, or until cooked through and cheese has melted.
