has anyone had success with making gf and corn free tortillas? i have tried a couple times and it's always a miserable failure. the worst part being that they just shred when i try to transfer them to the skillet for cooking.

I have never tried to make tortillas, but if you are looking for a GF corn free option check out Food For Life's rice tortillas. I really like them :

I've had success using a GF flour mix (rice, tapioca, potato etc) but think just rice & tapioca would work too, some EVOO and then water to make into a dough. Sorry, I don't have exact quantities as I just do it by eye. They are quite fragile but if you don't roll them out too thin and then put straight into a hot-ish pan (no oil or anything) and cook for 30 secs to a minute on each side (maybe more depending on thickness) they turn out fine.

HTH!

I haven't had any success makign them. I've used the Trader Joe's and Food For Life rice tortillas, but they're very stiff. They don't fold easily for wrapping (imo). I just made some gf lavash and it's nice and flexible for a wrap if something like that would work. Here's the recipe: http://glutenfree.wordpress.com/2008...grain-version/

Last night I used www.buckwheatpete.com 's English muffin recipe. I turned half (4) into English muffins, and rolled out the other half into 4 tortillas. They worked amazingly well. Next time, I'd roll out just a little thinner. My kids haven't had soft tacos in a year, I think. And there was one left over and I left it out last night (oops) but this morning, it had turned into a REALLY GOOD cracker!

thanks everyone for the replies. i was hoping to have tortillas to make burritos and quesadillas with. and maybe even some day enchiladas. i wish corn was an option for us. i will look to see if the hfs has any rice tortillas. usually i make my own gf stuff because the store bought is really expensive, unsatisfactory, or has stuff in it that is on our avoid list. or worse, all three. haha.

Chinese Pistache - have you tried steaming the tortillas first? the wrap recipe looks good. i especially like the pic of what the dough is supposed to look like. gf is so difficult. must work harder on healing our guts!
