I'm a newly single mom to a toddler and take care of another during the day. They nap at different times, eat lunch at different times, and instead of spending time with them I spend it preparing meals and snacks in the kitchen. I hate it. This isn't what being a mommy is all about!

I can't prepare everything on weekends, or the night before -- it just never happens. I have a small, open-floor planned house and about 2 square feet of counter space. It gets absolutely disgusting and I can't even go into another room to forget about it.

I need to cheat. I'm talking muffin mixes, prepackaged meals, and powdered milk -- anything to reduce my time in the kitchen during the day.

Does anybody have any suggestions? I don't eat any sugar, I don't even keep it in my house. Here are a few things I do so far, I:

~ buy day old bread and rolls from the bakery for super cheap and freeze them.
~ buy organic pasta (like Annie's) in a box and load it with veggies
~ make a massive amount of pancakes for breakfast on the weekends and freeze the leftovers for the week.
