I recently chopped up some rhubarb, tossed in the crock pot, and added about twice as much the volume in apple slices and made it into apple-rhubarb sauce, then after it had cooked for a couple of hours (until you can stir it and it is the consistency you like it), I added some honey to taste. It is very yummy and I like how simple it is (plus I'm not currently eating dairy)! It would probably be great with strawberries, too!
