So who has the best spaghetti / marinara sauce recipe?

I'm craving homemade marinara/spaghetti sauce tonight - but really gooood stuff. When spaghetti sauce is gooood, it's REALLY good -

Do you all have TDF spaghetti sauces? I'm looking for a red tomato-based sauce but otherwise anything gives....

IDK if mine's TDF... but we like it Its really simple: dice/saute 1 medium onion & a couple cloves of garlic in olive oil. Add a big can of diced tomatoes (I usually do 1 quart mason jar, but can easily do another pint in it if I feel like we'll need more), 1 can/jar/cup of tomato paste, ~1 TBSP parsley, honey/sugar & vinegar (red wine is my preference), ~1 tsp basil, oregano, garlic powder, onion powder, a dash of thyme and a lil salt & pepper... cook for 15-30 minutes till nice'n thick. Tada!! Yummy basic marinara sauce!

You can easily add meat to this (I usually do 1/2 pound), and/or lots of veggies for a thicker more wholesome sauce... but thats my 'base' sauce.

Here's my favorite sauce. I'll give you the recipe but it's a loosygoosy affair because I don't particularly measure things and it depends on what I have.

I start by chopping up an onion and marinating it in olive oil. If I have scallions I add those as well. After awhile I add chopped up kalamata olives and chopped up anchovies. In cold weather I'll add chopped up sun-dried tomatoes; when I have them I'll add a chopped up homegrown tomato. I also add some garlic and herbs: oregano, dill, basil. I stir in several spoons of tomato paste. I may add some spaghetti water or wine.

Last week, I watched Alton Brown's Good Eats, and he recommended white wine instead of red (I know!). I tried it last night, and it was really good. I think this might be my new secret ingredient.

I make mine very similar to mamadelbosque. We are out of home-canned tomatoes. Last night, for one batch, I used 1/2 pound meat, 1 big can crushed tomatoes, 1 small can diced tomatoes, and 1 can tomato paste, plus some water. It was enough for the 4 of us, plus some for the freezer.

You all are inspiring me. I used to make my own but these days I buy. However, the kind I buy is really, really good. It's the Trader Joe Tuscan Marinara Sauce (in the green can). I was totally against buying marinara sauce in a can (why?) but this stuff is so much better than any of the jarred sauce they sell. I decant it into a glass jar and keep it in the fridge. It has a really fresh taste.

Ok, back to the recipes.
