When is it safe to start picking my herbs?

I have some herb starts that I planted a little over a week ago. When is it safe to start picking some of the herbs?

As soon as they start putting out new green shoots/leaves it is fine to start picking the odd leaf off here and there. It encourages leafy growth - which is what you want with herbs.

Yep, I'd wait until you can visibly see they have started growing, which means the roots have put new roots out, etc. What kinds of herbs?
