Oh my. I took my all-time fav. kale recipe and decided it would be great for kale chips. (I have TONS of kale right now from our garden). IT ROCKS!

I dehydrated the chips and I promptly ate half a gallon bag. :

Take a nice bunch of kale, washed, and remove the stems. Tear into pieces about the size of your palm. Put in a big bowl. Drizzle w/about a tbsp of olive oil. Throw in about an inch of minced fresh ginger, 2 or 3 cloves of minced fresh garlic, about a tsp of toasted sesame oil, a couple of tbsp of tamari or soy sauce, a tbsp of rice vinegar, and a tbsp of sesame seeds. Massage all that into the kale w/your hands until the kale is well coated and kind of limp. It should decrease in size by about half. Dehydrate til crispy and enjoy!

Before you dehydrate you may want to taste and add seasonings to your liking. Or eat as is, lol.

Thank-you. Our HFS sells a version using red pepper, cashews, lemon juice, sea salt and nutritional yeast. They're delicious but very $. I'll be trying both of these recipes.
