A friend of mine had a baby two weeks ago and a group of us got together to supply them with meals for a couple of weeks. After hearing the long list of casseroles they were receiving I decided to make a Caesar salad with chicken, cheddar bay biscuits, and strawberry shortcake. It went over really well.
Now I'm looking for another meal idea, because my cousin had a baby two days ago. This is baby number 5, and it's a girl! (She is going to be so spoiled with 4 big brothers.) My cousin had a really rough birth this time, so I would like to prepare her a few meals. The boys don't seem to be too picky, but they are 10, 8, 6, and 3 years old so Caesar salad might not be the best choice.
Requirements:
No pork
No shellfish
All I can think of is marinated grilled chicken and pasta salad. I'm sure her husband or mom can make a veggie to go with it, and I'll probably send along some strawberry shortcake for them as well. Maybe I'll take her some homemade granola bars and cut-up fruit so the boys have something easy to snack on, too.
Can you help me think of another meal or two, though? The weather is finally nice and warm (it was 80 yesterday) so things like casseroles and soup and chili don't sound appealing.
