Can you freeze asparagus?

I got some AWESOME, thin, beautiful asparagus at the farmer's market today. Can you freeze it, or will it thaw all smooshy and yuck? If you can, do you just shove it into a freezer bag? TIA.

Boil a large pot of water

Cut the ends off the asparagus. The ends of the asparagus are tough and uneatable. You can either use a knife to trim the ends or hold each stalk and bend till the stalk breaks at the brittle point. Keep the top end and toss the bottom.

Wash the asparagus. Scrub it gently with a vegetable brush to get rid of all the dirt and grit. Cut the stalks into bite-sized pieces if you want.


Boil/blanch 2-4 min

Drain and cool in ice-cold water to stop it from cooking.


Put the blanched asparagus in freezer bags. Press air out of the bag and seal. Freeze

Yes, you can freeze it. Yes, it comes out mushy.

I freeze it on a sheet pan so I can just pull out a few stalks at a time, but I don't use frozen asparagus for anything other than pureed soup - the texture is just yucky, IMO.

According to joy of cooking (which is what I've used for most all of my canning/freezing for the past couple years) you can I haven't done so yet, but would love to sometime...

The texture doesn't come out as bad as canned asparagus or anything, but it's not going to have much "tooth" to it anymore either. I consider it comparable to frozen green beans or such ... I've never had it that it was SO mushy that I wouldn't use it for anything but purees like a PP. Maybe it's just a matter of personal tastes? I grew up on frozen vegetables, and the texture is pretty average to me.

You should blanch it first though, like most veggies.

I don't mind frozen asparagus. I wouldn't say it's "smushy".. more like bendy. It just loses it's crisp. If I buy asparagus I almost always buy it frozen unless I have immediate meal plans for it, otherwise it'll go bad in our fridge before we get the chance to eat it.

you can try some frozen asparagus recipes you like that is the best use of frozen asparagus. Like you can have some Asparagus and Tomato Salad with Yogurt-Cheese Dressing if you like salads you can pack it for lunch or serve on lunch table, it tastes very good!
