canning question-- unsafe, or no?

If I made jam and forgot to get all the air bubbles out before processing, is this a safety issue? Is the jam okay? The jars did seal properly, but all the instructions say that you shouldn't have trapped air, but they don't say WHY. Is there a reason?

If you processed it as per instructions, its fine. Air bubbles are only a 'nono', IMO, for astetichs & texture...

Okay, I'm not going to worry about it, then. I googled around some, and it seems like the main problem with bubbles is you might not get a good seal, but this seal is terrific. So no worries.

I did have one jar that didn't seal-- some of the jam bubbled out a few minutes after I put it out to cool. I think this is because I left too little headspace. Does that sound right to you? We're just going to fridge that one and eat it this week.

I've always made freezer jam; I've never canned jam before. I've always done tomatoes and pickles, and they don't seem to be so fussy.

Yeah, if anything boils out, I'd just assume you didn't have enough headspace... I typically try to leave 1/2 inch headspace vs the recommended 1/4 inch to avoid this, personally. And yeah, I'd just stick it in your fridge and eat that one first When I make jam/jelly if I have a little leftover (like 1/2 a jar or something), I just stick it in the fridge and don't bother to processes it at all
