Oil substitute

What kind of oil can I substitute for vegetable/canola? I would like to use coconut but I need it for things like pancakes. (To mix into the batter.) Thanks!

I don't use any oil when I make pancakes. It drives my husband nuts but I just throw stuff together until it looks right. Milk, flour, applesauce, cinnamon, a tiny bit of sugar, and egg(s).

You can melt the coconut oil and add it maybe? I don't know if that would work. I tried adding coconut oil to some indian food when I was first nursing my girls and trying to eat a lot of CO ... it sort of just floated and made an oily slick and it was nasty. Maybe it would mix better in batter?

Use any kind you like. Virtually any vegetable oil is substitutable for another if they're of the same state (liquid vs solid). Sunflower and walnut are the two liquid oils I keep on hand.

For something like pancakes that are getting cooked, I usually just melt some butter in my little stainless steel pitcher while I'm heating up the griddle, pour that in and call it good. But I've done it with CO also. They both work fine.

I love using coconut oil in pancakes (waffles, quick breads, etc). . .I just warm it a little until it is liquid. I also have used applesauce, mashed bananas, melted butter, pumpkin, etc. . .in place of the oil.
