1st Birthday "cake"

My DS is rapidly approaching his first birthday and I'm looking for ideas/recipes for a "cake" for the party. I say "cake" because I don't want anything resembling unnatural white or chocolate cake with sugary frosting. I'm thinking carrot/banana/zuchinni bread/cake of some kind?

Any ideas would be appreciated!

SOOOO yummy--I made it subbing lemon for the orange and even my non-tf mom LOVED it! I'd try it out b/4 making it for the party to be sure you like it, but I totally recommend trying it!!

ETA: It is really TF, as there are no grains NOT being soaked/sprouted, etc. Easy to digest. Also full of eggy goodness!

and instead of frosting we made a strawberry rhubarb sauce (sweetened with honey) and layered it like a cake. Definately more messy but some much tastier!

You can use sprouted wheat or sprouted spelt flour to make any of those quick-bread, muffin-method type "cakes" (carrot, for instance). You can order sprouted flour from a few different places online, or make your own if you have a way to grind the sprouted/dehydrated grains. I make a carrot/apple muffin with 100% sprouted spelt flour (and butter, eggs, and rapadura sugar) that would make a great cake, frosted with whipped cream or cream cheese frosting.

As for "icing" you can make whipped cream with as little sugar as you like. I always whip it with vanilla and some gelatin to stabilize it (make it more icing like so it doesn't melt) and no sugar. It's really yummy without! You can add orange, lemon, strawberry, raspberry flavor to it with a small amount of real fruit purees etc.

Then you still get the messy cake pics, but your babe is just eating wonderful heavy cream and maybe a little fruit!

I made triple ginger cupcakes with lemon cream cheese frosting (the cream cheese was homemade from raw milk). OMG, they were fabulous! I used sprouted wheat flour and it had crystalized ginger (so a little cane sugar), fresh ginger, and some ground ginger. YUMMO.

I need to try the coconut flour orange cake- sounds YUM!
